Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.
Washing Instruction
Wash your hands, carrots and spring onions well. Rinse your chives thoroughly and drain on paper towel.

Make sure you remove all distractions such as phones, ipads, tv etc while eating so that you can focus on your food. This helps with feeling when you are full as well as digestion.
Step 1 - Sweet Potato and Chive Mash
Cook your sweet potato chunks in a large saucepan of salted water for 12-15 minutes or until soft.
When done drain through a colander, mash with a potato masher and smooth out with your butter and milk.
Mix in your chopped chives and season with salt and pepper to taste.
Step 2 - Jeweled Veggies
Heat a large frying pan over med-high heat and add a glug of olive oil. Fry your diced carrots for 6-7 minutes until slightly caramelised and just about tender. Now add your cranberries and sliced spring onions. Cook for a further 2-3 minutes then remove the pan from the heat and add your pumpkin seeds.
Transfer to a serving dish once done.
Step 3 - Maple and Ginger Chicken
Season your chicken breasts with salt and pepper.
Give your frying pan a quick clean and place it back on the stove still on med-high heat. Add a glug of olive oil and fry your chicken breasts for 3-4 minutes on each side, until lightly browned and thoroughly cooked. Transfer to a plate when done.
Now add your DailyDish Maple and Ginger Glaze. Once it bubbles vigorously; remove your the pan from the heat, return the chicken to the pan and coat in the sauce.
To serve
Place your sweet potato and chive mash as your base, top with your jewelled veggies and finish with your maple and ginger chicken. Drizzle any leftover sauce over the top. Enjoy!
