Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.
Washing Instruction
Wash your hands and green beans well. Rinse your swiss chard thoroughly and drain on paper towel.
Mariella's Tip
Try to eat leafy green veg at least once a day as they are so good for us and packed with nutrients such as iron and calcium!
Step 1 - Potato Milk Mash
Cook your potato chunks in a medium saucepan with just enough milk and water to cover (I use a 1:1 ratio).
Be sure to season with salt, and cook for 12-15 minutes until soft.
Drain through a colander, reserving a bit of your cooking liquor, and mash until rustically smooth with a potato masher; adding your cooking liquor to thin your mash if need be - small amounts at a time.
Season to taste with salt and pepper.
Step 2 - Onions and Green Beans
Heat a large casserole pan over med-high heat, add a drizzle of olive oil and caramelise your onions for 4-5 minutes until golden.
Proceed to add your green beans, beef stock, and a few dashes of water and cook for 3-4 minutes with a lid until your green beans are tender.
Once done taste and season with salt and pepper to your liking and mix through your shredded or torn swiss chard, cook for 2-3 minutes and remove your pan from the heat.
Step 3 - Pan Seared Sirloin
Season your sirloin steaks with salt and pepper.
Place a large frying pan on the stove over med-high heat, once your pan is hot but not smoking, sear your steaks for 2-3 minutes on each side.
To serve
Place your potato milk mash as your base, top with your onions and green beans, sirloin steak, and drizzle over your DailyDish Horseradish and Mustard. Enjoy!
