Curry Pork, Avo and Sour Cream Tacos

A quick mid-week soft shell taco filled with crispy masala style pork, cooling guac and a refreshing buttermilk cabbage and cucumber salsa.




Ingredients to serve 2

  • 300g x Pork Neck Goulash - each cube cut in half
  • 2 tbsps x Corn Flour
  • ½ tsp x Curry Powder
  • 1.25g x Butter Chicken Masala
  • 100g x Cabbage - finely shredded
  • 1 x Corn on the Cob - See Gino's Tip
  • 5g x Coriander - chopped
  • 80ml x Sour Cream
  • 100ml x Guacamole
  • 6 x Tortilla Wraps
  • 80g x DD Aromatic Base
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 600g x Pork Neck Goulash - each cube cut in half
  • 4 tbsps x Corn Flour
  • 1 tsp x Curry Powder
  • 2.5g x Butter Chicken Masala
  • 200g x Cabbage - finely shredded
  • 2 x Corn on the Cob - See Gino's Tip
  • 10g x Coriander - chopped
  • 160ml x Sour Cream
  • 200ml x Guacamole
  • 12 x Tortilla Wraps
  • 160g x DD Aromatic Base
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items” Whisk together your sour cream and some milk until you have a light dressing. Taste and season with salt and pepper, clingfilm for use later.

Washing Instruction

Wash your hands, cabbage and corn well. Rinse your coriander thoroughly and drain on paper towel.

Gino's Tip

To keep your tortillas moist when frying, I generally brush them with a mixture of equal volumes of water and oil.

Step 1 - Curried Pork

Coat your pork cubes in your cornflour and place a large frying pan over high heat. Add a shallow layer of sunflower oil and allow the oil to become hot. Fry your pork cubes in batches - as to not overcrowd your pan - for 2-3 minutes until crisp. Remove with a slotted spoon and drain on a paper towel. Once all your pork has been crisped; decant your oil, reduce your temperature to med-heat, now add a drizzling of olive oil and your DailyDish Aromatic Base. Fry until your aromatics are soft, about 4-5 minutes, then proceed to add your curry powder, butter chicken masala, butter and a dash of water. Cook for 1-2 minutes then remove your pan from the heat and season your sauce with salt and pepper. Toss and coat your crispy pork in this sauce.

Step 2 - Sour Cream Slaw and Seasoned Guac

Toss your shredded cabbage along with your chopped coriander and your sour cream dressing you made earlier in a large mixing bowl. Taste and season with salt and pepper to bring the flavors out. In a small mixing bowl season your guacamole with salt, pepper and a drizzling of olive oil.

Step 3 - Pan-Fried Tortillas - See Gino's Tip

Proceed to heat your soft shell tacos in the microwave for about 40 seconds or by pan-frying them with a bit of olive until golden and brown spots start to develop about 20 seconds.

To Serve

Divide your soft shell tortillas amongst your servings, top with your guacamole, sour cream slaw and curried pork
