Mystic Chicken and Mango Burgers

Chicken burgers with an Eastern makeover, mango chutney, and red cabbage and turmeric yoghurt slaw.




Ingredients to serve 2

  • 2 x Chicken Breast
  • 5g x DD Spice Mix - indian chicken
  • 150g x Red Cabbage - finely shredded
  • ½ x Cucumber - halved lenghtwise and thinly sliced
  • 1 stalk x Spring Onion - finely sliced
  • 120ml x Plain Yoghurt
  • ½ tsp x Turmeric
  • 2 tbsps x Mango Chutney
  • 5g x Italian Flat Leaf Parsley - chopped
  • 300g x Baby Potatoes - halved
  • 2 x Sesame Seed Hamburger Roll
  • Butter - room temperature (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast
  • 10g x DD Spice Mix - indian chicken
  • 300g x Red Cabbage - finely shredded
  • 1 x Cucumber - halved lenghtwise and thinly sliced
  • 2 stalks x Spring Onion - finely sliced
  • 240ml x Plain Yoghurt
  • 1 tsp x Turmeric
  • 4 tbsps x Mango Chutney
  • 10g x Italian Flat Leaf Parsley - chopped
  • 600g x Baby Potatoes - halved
  • 4 x Sesame Seed Hamburger Roll
  • Butter - room temperature (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”. Preheat your oven to 220C.

Washing Instruction

Wash your hands, red cabbage, cucumber, spring onion, and baby potatoes well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

Just as with any protein it's a good idea to get your chicken breasts out of the fridge and at room temperature for 15-20 minutes before cooking them. In this way, the breast will cook more uniformly and reach internal temperature quicker as the center won't be cold from the refrigerator.

Step 1 - Baby Potatoes

Toss your baby potato halves in a large mixing bowl along with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and pop into the oven for 25-30 minutes until crispy and cooked through. Once your potatoes are done, place your sesame seed burger halves (buttered or not, at your discretion) into the oven to toast for 2-3 minutes.

Step 2 - Cucumber Slaw

Toss your shredded red cabbage, sliced cucumber, and spring onion in a large mixing bowl along with your yogurt and turmeric, season with salt and pepper to taste and reserve to serve.

Step 3 - Indian Chicken

Season your chicken breast with salt, pepper and rub with your DailyDish Spice Mix. Heat a large frying pan over med heat and add a glug of olive oil. Once the oil is hot, fry the breasts for 2 minutes on each side until they've had 6-8 minutes cooking time in total. You want to flip your chicken a bit more often so that your spices don't singe.

To Serve

Divide your sesame seed roll bottoms amongst your servings, top with your cucumber slaw, indian chicken, mango chutney and chopped italian flat leaf parsley, serve with your roasted baby potatoes.
