Pork Sirloin with Capsicum Hash and Harissa

Ain't nobody got time for that, said no one using DailyDish with this oven-roasted sweet potato and capsicum minted hash with seared pork and spiced Turkish tomato sauce.




Ingredients to serve 2

  • 2 x Pork Sirloin Steaks
  • 1 x Onion - halved and cut into chunks
  • 15g x Garlic - Crushed
  • 1 x Red Pepper - core removed and chunked
  • 300g x Sweet Potato Chunks
  • 1 tbsp x Harissa Paste
  • ⅛ cup x Passata
  • 5g x Mint - leaves picked and chopped - See Step 1
  • 20g x Butter (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Pork Sirloin Steaks
  • 2 x Onion - halved and cut into chunks
  • 30g x Garlic - Crushed
  • 2 x Red Pepper - core removed and chunked
  • 600g x Sweet Potato Chunks
  • 2 tbsps x Harissa Paste
  • ¼ cup x Passata
  • 10g x Mint - leaves picked and chopped - See Step 1
  • 40g x Butter (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Preheat your oven to 220°C.

Washing Instruction

Wash your hands and red peppers well. Rinse your mint thoroughly and drain on paper towel.

Step 1 - Potato and Red Pepper Hash

Cook the sweet potato chunks in a large saucepan of salted water for 12-15 minutes until soft. Drain through a colander. While your sweet potatoes are cooking, mix your onion and red pepper chunks along with the crushed garlic in a large mixing bowl. Drizzle with olive oil and season with salt and pepper. Scatter onto an oven tray and pop into the oven for 12-15 minutes until lightly browned and tender. Once done, mix with your cooked sweet potato, roast peppers and chopped mint.

Step 2 - Grilled Pork and Harissa

Harissa is slightly spicy, so please taste before you use it and use at your discretion. Season your pork sirloin steaks with salt and pepper and rub with olive oil. Heat a large grill pan over med-high heat, once hot but not smoking, grill your steaks for 3-4 minutes on each side until completely cooked through. Transfer to a chopping board once done and in the same pan; add your harissa paste, tomato puree, a dash of water and butter and heated through.

To serve

ivide your potato and red pepper hash amongst your servings and top with your grilled pork and harissa sauce.
