Blackened Cumin Chicken and Salsa Roja Taco

Cumin and sumac seared chicken with crispy refried beans, baby radish and carrots slaw with creme fraiche and herbed salsa Roja tortillas.




Ingredients to serve 2

  • 2 x Chicken Breasts - See Before You Begin
  • 100g x Cabbage - shredded
  • 1 x Carrots - julienne with a julienne peeler or grated
  • 2 x Baby Radish - grated
  • ½ tin x Red Kidney Beans - drained and rinsed
  • 10g x Crushed Garlic
  • 70ml x Sour Cream
  • 75g x Cherry Tomatoes
  • 5g x Coriander - chopped
  • 4 x Tortilla Wraps
  • 60ml x DD Mexican Chunky Tomato Sauce
  • 5g x DD Spice Mix - blackened chicken
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breasts - See Before You Begin
  • 200g x Cabbage - shredded
  • 2 x Carrots - julienne with a julienne peeler or grated
  • 4 x Baby Radish - grated
  • 1 tin x Red Kidney Beans - drained and rinsed
  • 20g x Crushed Garlic
  • 140ml x Sour Cream
  • 150g x Cherry Tomatoes
  • 10g x Coriander - chopped
  • 8 x Tortilla Wraps
  • 120ml x DD Mexican Chunky Tomato Sauce
  • 10g x DD Spice Mix - blackened chicken
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Cut your chicken breast's into cubes and marinate them in olive oil and your DailyDish Spice Mix.

Washing Instruction

Wash your hands, carrots, baby radish and cherry tomatoes well. Rinse your coriander thoroughly and drain on paper towel.

Replacing white wraps/bread with wholegrain or brown alternatives is a great way to increase the fibre in your diet, which will keep you fuller for longer.

Step 1 - Fried Beans

Heat a large frying pan over med-high heat, add a drizzle of olive oil and fry your garlic and beans for 3-4 minutes until the skins are lightly crisped and your beans have popped. Transfer to a serving dish, taste and season with salt and pepper once done.

Step 2 - Blackened Chicken

Season your marinated chicken with salt and pepper. Give your large frying pan a quick clean and place it back on the stove over med-high heat, add a glug of olive oil and once your pan is hot but not smoking, sear and cook your chicken cubes for 4-6 minutes, attaining a nice char.

Step 3 - Crunchy Slaw

Mix your shredded cabbage, julienne carrots and grated baby radishes in a large mixing bowl along with a drizzle of olive and a seasoning of salt and pepper.

Step 4 - Salsa Roja

Heat your DailyDish Chunky Tomato Sauce in the microwave, remove once hot and add your quartered cherry tomatoes and chopped coriander. Season with salt and pepper to taste.

To serve

Heat your tortillas in the oven or a pan for 1-2 minutes, spread with your creme fraiche, top with your fried beans, crunchy slaw, blackened chicken and salsa Roja. Divide your tortillas amongst your servings.
