Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.
Washing Instruction
Wash your hands and English tomato well. Rinse your baby spinach thoroughly and drain on paper towel.
Mariella's Tip
When frying food, try and stick to 1 tsp of fat per person to avoid excessive fat intake. Another tip you can try is to place your fried food onto paper towel afterwards to soak up any excessive fat.
Step 1 - South Indian Curry
Heat a large casserole pan over med-high heat. Add a glug of olive oil and wilt your baby spinach for 3-4 minutes. Transfer to a serving dish.
Now sweat your diced onion for 4-5 minutes until soft and translucent. Now add your chopped English tomato and DailyDish Spice Mix and cook for 2-3 minutes, while stirring to avoid catching the spices on the base of the pan.
Proceed to add your butternut and coconut milk. Stir to incorporate your spice mix and simmer for 20-25 minutes until the butternut is tender. Thin your sauce with some milk if it thickens too much.
In the last 8-10 minutes add your lentils.
When done, taste and season with salt and pepper to your liking and finish by mixing in your wilted baby spinach. Taste and season with salt and pepper.
Step 2 - Black Sesame Pork
Season your pork sirloin steaks with salt and pepper and rub with your black sesame seeds.
Place a large frying pan over med-high heat. Add a glug of olive oil and fry your pork sirloin steak for 2 minutes on each side until they've had 8 minutes cooking time in total. Try to get a good sear initially so that your sesame seeds stick to your meat.
Remove the pan from the heat and allow your pork sirloin steak to rest while you're serving.
To serve
Place your south Indian curry as your base and top with your black sesame pork.
