Solo: Cajun Chicken, Cottage Dipper and Crispy Pot

Now, this is just satisfying grilled spicy chicken breast, refreshing cottage and chilli dipper sauce with roast sweet potatoes and peppadews.

Ingredients to serve 1

  • 1 x Chicken Breasts - flattened
  • ¼ tsp x Cajun Spice
  • 50g x Chunky Cottage Cheese
  • 20g x Peppadews - chopped
  • ¼ x Chili - halved, de-seeded and chopped
  • 2.5g x Fennel - chopped
  • 150g x Sweet Potato Roundels - each roundel halved
  • 75g x Cherry Tomatoes - halved
  • 1 Tbsp x Basil Pesto
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Before you begin, preheat your oven to 220°C. Toss your halved cherry tomatoes with your basil pesto, a good few glugs of olive oil and salt and pepper. Clingfilm and reserve to serve.

Washing Instruction

Wash your hands, chilli and cherry tomatoes well. Rinse your fennel thoroughly and drain on paper towel.

Gino's Tip

By removing the seeds of your chilli you will remove most of its potency however it can still be used at your discretion in the recipe.

Step 1 - Crispy Sweet Potato

Toss your halved sweet potato roundels in a large mixing bowl along with a drizzling of olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven to roast for 18-25 minutes until your sweet potatoes are lightly browned, crisp and tender.

Step 2 - Chunky Sweet Spiced Dipper

Mix together your chunky cottage cheese, chopped peppadews, chopped chilli (at your discretion) and your chopped fennel in a medium mixing bowl. Mix through a few glugs of olive oil and reserve your dipper sauce for serving.

Step 3 - Grilled Chicken

Season your flattened chicken breasts with salt and your cajun spice. Heat a large grill pan over med-high heat, once your pan is hot and beginning to smoke, sear your chicken breasts for 2-3 minutes on each side until completely cooked through. Depending on the size of your pan you might have to do the chicken in batches, cleaning the pan out between each batch if the spice catches too much.

To Serve

Divide your chunky sweet spiced dipper amongst your servings, top with your crispy sweet potatoes, pesto tomatoes and grilled cajun chicken.
