Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.
Mix your beef mince along with your whisked egg and DailyDish Spice Mix - doner, season with salt and pepper. Then proceed to roll your mince mixture into 16-20 meatballs for 4 servings or 8-10 meatballs for 2 servings.
Flatten your meatballs into mini patties once you're done with them.
Washing Instruction
Wash your hands, potatoes and plum tomatoes well. Rinst your chives and mint thoroughly and drain on paper towel.
Mariella's Tip
Doner kebab is a type of kebab, made of meat cooked on a vertical rotisserie. Seasoned meat stacked in the shape of an inverted cone is turned slowly on the rotisserie, next to a vertical cooking element. The outer layer is sliced into thin shavings as it cooks. This recipe is inspired by the concept with regards to flavors.
Step 1 - Za'atar Fries
Toss your potato wedges or fries in a large mixing bowl along with a drizzle of olive oil, your DailyDish Spice Mix - za'atar, salt, and pepper.
Scatter onto an oven tray and pop into the oven for 25-30 minutes, gently toss or turn your wedges or fries and rotate your oven tray halfway through to ensure even cooking and crisping.
Step 2 - Minty Herb Salad
Mix your diced plum tomatoes, picked mint, and chives in a medium mixing bowl. Gently mix through your feta, cling film your bowl and reserve in the fridge until you're ready to serve.
Step 3 - Caramelised Onion Gravy
While your potatoes are roasting, heat a large casserole pan over med-high heat, add a glug of olive oil and sweat your sliced onions for 10-12 minutes.
Once your onions have softened; add your liquid chicken stock, pantry water and bring this liquid to the boil. Mix your cornflour with a dash of water, lower the heat of your pan to low and stir your cornflour slurry into your onion and stock mixture.
Cook for 1 minute until your sauce has thickened slightly and removed your pan from the heat; if your sauce has thickened too much, don't worry you can thin it out with a dash of water.
Transfer to a serving dish or bowl.
Step 4 - Doner Patties
Place your large frying pan over med-high heat, once your pan is hot but not smoking, add a glug of olive oil and fry your meatball patties for 3-4 minutes on each side or until cooked to desired doneness.
Do them in batches to as many as your pan can fit.
To Serve
Divide your za'atar fries amongst your servings, top with your caramelised onion gravy, minty herb salad and your doner patties.
