BBQ Glazed Aub and Mozzarella Pizza

A gratifying ease for the week with this saucy glazed aubergine and mushroom crispy base dinner wonder.




Ingredients to serve 2

  • 1 x Aubergines - halved and cut into half moons
  • 80ml x DD Shisha BBQ Sauce
  • 2 tsp x Harissa Paste
  • 2 x Courgette - halved lengthwise then chunked
  • 100g x Button Mushrooms - sliced
  • ½ x Red Onion - small dice
  • 1 x Pizza Base
  • ⅛ cup x Pizza Sauce
  • 100g x Grated Mozzarella
  • All Purpose Flour (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 2 x Aubergines - halved and cut into half moons
  • 160ml x DD Shisha BBQ Sauce
  • 4 tsp x Harissa Paste
  • 4 x Courgette - halved lengthwise then chunked
  • 200g x Button Mushrooms - sliced
  • 1 x Red Onion - small dice
  • 2 x Pizza Base
  • ¼ cup x Pizza Sauce
  • 200g x Grated Mozzarella
  • All Purpose Flour (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, aubergine, courgette well.

Gino's Tip

Please keep an eye on your pizzas when they are closer to the element and move them around regularly to avoid the bases from singeing.

Step 1 - Roasted BBQ Aubergine and Harissa Vegetables

Toss your quartered button mushrooms and chunked courgette in a large mixing bowl with a drizzling of olive oil, salt and pepper. Scatter onto an oven tray (reserve your bowl) and pop into the oven for 12-15 minutes until your vegetables are lightly browned and tender. Toss your aubergine half-moons with olive oil, salt and pepper then scatter onto an oven tray and roast for 15 minutes until lightly browned and cooked through. Once your button mushrooms and courgette are done cooking toss them with your harissa paste. Once your aubergine is done drizzle over your DailyDish Shisha BBQ Sauce.

Step 2 - Assembling your Pizza - See Gino's Tip

When your vegetables are done, give your oven tray a quick clean and place your pizza bases on the reverse side of it. Flouring the tray will stop the bases from sticking to it. Top with your pizza sauce, roasted mushrooms, courgette and aubergine. Sprinkle over your grated mozzarella and finally your sliced onions. Place in the middle of your oven to heat through for 2-3 minutes. Proceed to change your oven setting to grill and allow to gratinate for 3-4 minutes until the cheese is oozy, the filling is hot and the bases are crispy.

To Serve

Divide your BBQ glazed aubergine pizza amongst your servings
