Asian Beef Noodle Salad

Sometimes it's great to come home and watch your dinner come together without having to do anything at all, said no one ever. No said everyone on DailyDish with this sweet chili and lemon seared beef, greens and sprouts egg noodle salad.




Ingredients to serve 2

  • 300g x Beef Mince
  • 100g x Peas
  • 50g x Bean Sprouts
  • ½ x Cucumber - halved lengthwise and thinly sliced
  • 200g x Green Beans - stem end trimmed and chopped
  • 2.5 x Egg Noodles
  • 5g x Basil - leaves pulled from stem
  • 5g x Mint - leaves pulled from stem
  • 10g x Coconut Flakes
  • 55ml x DD Sambal Dressing
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 600g x Beef Mince
  • 200g x Peas
  • 100g x Bean Sprouts
  • 1 x Cucumber - halved lengthwise and thinly sliced
  • 400g x Green Beans - stem end trimmed and chopped
  • 5 x Egg Noodles
  • 10g x Basil - leaves pulled from stem
  • 10g x Mint - leaves pulled from stem
  • 20g x Coconut Flakes
  • 110ml x DD Sambal Dressing
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1. Whisk your DailyDish Sambal dressing along with a few glugs of olive oil in a medium mixing bowl, season with salt and pepper

Washing Instruction

Wash your hands, bean sprouts, cucumber and green beans well. Rinse your basil and mint thoroughly and drain on paper towel.

Mariella's Tip

Alternately you could submerge and soak your egg noodles in a clingfilmed boil of boiling hot water for 10-15 minutes until soft.

Step 1 - Egg Noodles

Once your water has come to the boil, cook your egg noodles for 5-6 minutes until just about cooked. Drain through a colander and drizzle and toss lightly with some olive oil.

Step 2 - Noodle Salad Base

Heat a large frying pan over med-high heat, add a drizzling of olive oil then add your peas and green beans with a dash of water. Cook for 4-5 minutes until just about tender, season with salt and pepper. Once done toss in a large mixing bowl along with your bean sprouts, thinly sliced cucumber, basil, mint and coconut flakes. Season with salt and pepper.

Step 3 - Crispy Mince

Heat a large frying pan over med-high heat, add a good drizzling of olive oil once your pan is hot add your beef mince, allow your mince to sear and crust before moving it around then continue cooking in this way for 6-8 minutes until your mince is crisped and cooked. Season with salt and pepper and drain on paper towel

To Serve

Mix your noodles and your mince into your large mixing bowl with your vegetables, dress and toss with your DailyDish Sambal Dressing, tasting and then seasoning if need be. Divide your Asian beef noodle salad amongst your servings.
