Cheats Akni and Sambal

Quick and easy beefy cheats Malay akni with lentil and mushroom rice and tartly, sweet tomato and brown onion herby sambal.




Ingredients to serve 2

  • 250g x Beef Goulash
  • ½ x Onion - diced
  • 10g x Garlic - crushed
  • 1 tbsp x Turmeric
  • 1 tsp x Cumin
  • 100g x Peas
  • 125g x Button Mushrooms - quartered
  • 80g x Basmati Rice
  • ½ x Cucumber - diced
  • 1 x English Tomato - diced
  • 5g x Italian Flat Leaf Parsley - chopped
  • 40ml x White Wine Vinegar
  • 40g x Butter (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 500g x Beef Goulash
  • 1 x Onion - diced
  • 20g x Garlic - crushed
  • 2 tbsps x Turmeric
  • 2 tsps x Cumin
  • 200g x Peas
  • 250g x Button Mushrooms - quartered
  • 160g x Basmati Rice
  • 1 x Cucumber - diced
  • 2 x English Tomato - diced
  • 10g x Italian Flat Leaf Parsley - chopped
  • 80ml x White Wine Vinegar
  • 80g x Butter (from your pantry)
  • Sugar/Sweetener (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of water the boil for use in Step 1.

Washing Instruction

Wash your hands, cucumber and English tomato well. Brush your button mushrooms with a soft basting brush. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Step 1 - Basmati Rice

Once your water has come to the boil, add your basmati rice. As soon as the water boils again, give the rice a good stir, reduce the heat to a simmer and cook for 8-10 minutes. Drain through a colander and set aside till later.

Step 2 - Quick Sambal

While your rice is cooking, mix your diced cucumber, diced English tomato, chopped Italian flat-leaf parsley and white wine vinegar in a medium mixing bowl. Add a good few glugs of olive oil and balance the tartness with some sugar/sweetener, about 1-2 tsp, this will add a nice sweet and sour note to your sambal.

Step 3 - Seared Beef

Season your beef goulash with salt and pepper. Heat a large frying pan over high heat, add a glug of olive oil and once the pan is hot, sear your beef goulash for 1-2 minutes on each side until caramelized and browned. You don't want to cook your meat all the way through as it will be mixed into your rice in the next step.

Step 4 - Cheats Akni

Heat a large casserole pan over med-high heat, add a glug of olive oil and fry your quartered button mushrooms for 3-4 minutes until well browned and cooked. Transfer to a serving dish once done. In the same pan sweat off your diced onions and crushed garlic until soft and translucent, about 4-5 minutes. Proceed to add your butter, peas and cook until your peas are tender. Return your button mushrooms and add your seared rump to the pan along with your turmeric and cumin. Heat through for 1 minute. Season with salt and pepper to taste and remove your pan from the heat until your rice is cooked - with curries you wouldn't generally season with pepper as this is a mild Malay savory rice dish you can use pepper to balance your flavors. Once your rice has cooked, return your casserole pan to the heat, mix your rice into your cheat's akni mixture, taste once more and balance with salt and pepper if need be.

To Serve

Divide your cheat's akni amongst your servings and serve with your quick sambal salad.
