Spiced Sesame Chicken with Quick Chickpea Braise

Sesame crusted seared chicken breast in a saucy quick braise tomato, chickpea, and baby spinach side finished with tangy feta.




Ingredients to serve 2

  • 2 x Chicken Breasts - flattened
  • ½ x Red Onion - diced
  • 1 clove x Garlic - chopped finely
  • ½ tin x Chickpeas - drained and rinsed
  • 75g x Cherry Tonatoes - halved
  • ½ x Lemon - zested and juiced
  • 75g x Baby Spinach - long or thick stems removed
  • 60g x Capers - drained and chopped
  • 50g x Feta - gently crumbled
  • 5g x DD Spiced Sesame Rub
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breasts - flattened
  • 1 x Red Onion - diced
  • 2 cloves x Garlic - chopped finely
  • 1 tins x Chickpeas - drained and rinsed
  • 150g x Cherry Tonatoes - halved
  • 1 x Lemon - zested and juiced
  • 150g x Baby Spinach - long or thick stems removed
  • 120g x Capers - drained and chopped
  • 100g x Feta - gently crumbled
  • 10g x DD Spiced Sesame Rub
  • 60g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”.

Washing Instruction

Wash your hands, cherry tomatoes and lemon well. Rinse your baby spinach thoroughly and drain on paper towel.

Mariella's Tip

Avoid using too much oil or fat when frying food. 1 tsp per person is a good guideline to stick to to avoid excessive fat intake.

Step 1 - Tomato and Chickpea Quick Braise

Heat a large casserole pan over med-high heat, add a good glug of olive oil and fry your diced onions and chopped garlic for 4-5 minutes, until soft and fragrant. Now add your halved cherry tomatoes and capers. Cook until the tomatoes are soft and just about breaking down about 3-4 minutes. Lastly add your chickpeas, butter, lemon juice and zest. Cook until the chickpeas have heated through, about 2-3 minutes. Remove the pan from the heat and add your crumbled feta. Taste and season your braise to your liking with salt and pepper.

Step 2 - Saute Baby Spinach

Heat a large frying pan over med-high heat, add a glug of olive oil and saute your baby spinach in batches until wilted, for 2-3 minutes. Transfer to a serving dish, season lightly with salt and pepper and, once all your spinach is done, mix it into your tomato and chickpea quick braise.

Step 3 - Sesame Spiced Chicken

Rub your flattened chicken breasts with your DailyDish Spiced Sesame Rub. Give your frying pan a quick clean and place it back over med-high heat. Add a glug of olive oil and fry your chicken breasts for 2 minutes on each side until they've had 6-8 minutes cooking time in total. Remove the pan from the heat and allow your chicken to rest while you're serving.

To Serve

Place your tomato and chickpea quick braise as your base and top with your sesame spiced chicken breasts, whole or sliced.
