Onion Crust Pork with New Potato and Mashed Peas

There's nothing better than a bowl of steamed new potatoes and garlicky mushy peas and if there is nothing better out there well, we would have figured it out.....guess what, we did.....try our onion and parmesan-crusted pork sirloin steak with bloody mary green beans, steamed baby potatoes and mushy peas.




Ingredients to serve 2

  • 2 x Pork Sirloin Steaks
  • 30g x Crispy Onions
  • 20g x Parmesan - grated
  • 250g x Baby Potatoes - halved
  • 100g x Peas
  • 5g x Italian Flat Leaf Parsley - chopped
  • 100g x Green Beans - stem end trimmed
  • 15g x Crushed Garlic
  • 45ml x DD Tomato Vinaigrette Base
  • 20g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Pork Sirloin Steaks
  • 60g x Crispy Onions
  • 40g x Parmesan - grated
  • 500g x Baby Potatoes - halved
  • 200g x Peas
  • 10g x Italian Flat Leaf Parsley - chopped
  • 200g x Green Beans - stem end trimmed
  • 30g x Crushed Garlic
  • 90ml x DD Tomato Vinaigrette Base
  • 40g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of water to the boil for cooking your peas in Step 1. Melt your butter slightly in the microwave about 10-15 seconds then in a small mixing bowl mix your butter, crispy onions and grated parmesan until you have a light crumbing. Whisk your DailyDish Tomato Vinaigrette with a few glugs of olive oil and season lightly with black pepper.

Washing Instruction

Wash your hands, baby potatoes and green beans well. Rinse your Italian flat-leaf parsley thoroughly and drain on paper towel.

Gino's Tip

A food processor works great for your peas, take half of your cooked peas and blitz them with a bit of water. Don't sweat it if you don't have a food processor you can proceed as per instructions and you will still have the same deliciousness.

Step 1 - Potato and Mashed Peas - See Gino's Tip

Cook your halved baby potatoes in a large saucepan of salted water for 12-15 minutes until soft. Drain through a colander then place in a large mixing bowl and lightly mash with a potato masher, season with salt and pepper. Once your medium saucepan of water has come to the boil cook your peas for 2 minutes until tender. Drain through a colander and in a separate bowl, lightly mash with a potato masher, add your chopped Italian flat-leaf parsley and season lightly with salt and pepper. Once your potatoes and peas are ready you can proceed to gently mix them together.

Step 2 - Pan Fried Green Beans

Heat a large casserole pan over med-high heat, add a drizzle of olive oil and once your pan is hot, fry your green beans for 3 minutes, then add your crushed garlic. Proceed to add a dash of water and cook for a further 3-4 minutes until your green beans are just about tender. Transfer your green beans to a serving dish and keep warm in the microwave until you're ready to serve.

Step 3 - Onion Crumb Pork - See Gino's Tip

Season your pork sirloin steaks with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a drizzle of olive oil and fry your steaks for 3-4 minutes on each side or until cooked to your desired doneness. Now sprinkle your onion crumbing onto each steak, cover your pan with a lid, remove your pan from the heat and allow your parmesan to melt slightly onto your steaks.

To Serve

Dress your green beans with your tomato vinaigrette. Divide your potato and mashed peas amongst your servings along with your dressed green beans and onion crumb pork.
