Solo: Creamy Curried Chicken and Mushroom Pie

Just because the sun is out doesn't mean the chill is gone and who wouldn't want the last few chances to cozy up after a hard day's work and indulge in a low carb curried chicken and mushroom sweet potato gratin, lashings of health with no crimping on flavor.




Ingredients to serve 1

  • 100g x Smoked Chicken - flaked
  • 200g x Sweet Potato Chunks
  • 50g x Swiss Chard - roughly shredded
  • 50g x Button Mushrooms - sliced
  • ¼ sachet x Chicken Stock
  • ¼ tbsp x Curry Powder
  • 50ml x Cream
  • 25ml x Sour Cream
  • 7.5g x Parmesan - grated
  • 5g x Crispy Onions
  • 25ml x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands well. Rinse your swiss chard thoroughly and drain on paper towel. Brush your mushrooms with a soft basting brush or wipe with a clean kitchen towel. Never wash mushrooms they absorb water and will make your meal turn out watery.

Gino's Tip

You just want to lightly crush your sweet potatoes until they just about break apart.

Step 1 - Sweet Potatoes

Cook your sweet potato chunks in a large saucepan of salted water for 12-15 minutes until soft. Once soft, drain through a colander and lightly mash with a potato masher - See Gino's Tip.

Step 2 - Greens and Sour Cream Sauce

Heat a large casserole pan over med-high heat, add a drizzle of olive oil and fry your button mushrooms for 3-4 minutes until tender. Now add your swiss chard and continue cooking until your chard has wilted - transfer to a serving dish. Remove your pan from the stove and in the residual heat mix together your cream, sour cream, chicken stock, curry powder and boiling water. Add your cooked greens, flaked/diced smoked chicken and transfer to a medium baking dish. Once your potatoes are lightly mashed, place them on top of your greens and sour cream mixture and sprinkle over your parmesan and crispy onions. Place in the oven and bake for 8-10 minutes until your cheese and potatoes are lightly browned.

To Serve

Divide your creamy curried chicken and mushroom pie amongst your servings.
