Grilled Chicken Caprese

Grilled chicken with feta Caprese salad and cheesy Portuguese rolls.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • 2 x Plum Tomatoes - large dice
  • ½ x Cucumber - large dice
  • 40g x Baby Spinach - long or thick stems removed
  • 50g x Feta - gently crumbled
  • 2 x Portuguese Rolls - See Gino's Tip
  • 1 clove x Garlic - chopped
  • 5g x Thyme - leaves pulled from stem
  • 50g x White Cheddar - grated
  • 75ml x DD Balsamic Glaze
  • 50g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breast - flattened

  • 1 x Cucumber - large dice
  • 80g x Baby Spinach - long or thick stems removed
  • 100g x Feta - gently crumbled
  • 4 x Portuguese Rolls - See Gino's Tip
  • 2 cloves x Garlic - chopped
  • 10g x Thyme - leaves pulled from stem
  • 100g x White Cheddar - grated
  • 150ml x DD Balsamic Glaze
  • 100g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 180°C.

Washing Instruction

Wash your hands, plum tomatoes and cucumber well. Rinse your baby spinach and thyme thoroughly and drain on paper towel.

Gino's Tip

Cut an incision along the top of your Portuguese roll but not all the way through.

Step 1 - Cheesy Garlic Rolls

Melt your butter in a bowl in the microwave until liquid. Add your chopped garlic and thyme leaves. Season with salt and pepper. Grab a teaspoon and drizzle garlic and herb butter between the incision of your Portuguese rolls. Now stuff your cheese into the incision. Place on an oven tray, cover with foil and bake for 4-6 minutes until the cheese has melted. Remove the foil and continue baking for 3-4 minutes until your rolls are slightly toasted.

Step 2 - Caprese Salad

Mix your diced plum tomatoes, diced cucumber, baby spinach and crumbled feta in a large mixing bowl. Cling film and refrigerate until later. Whisk your DailyDish Balsamic Glaze with a few glugs of olive oil, in a medium mixing bowl, and season with salt and pepper. A basic dressing is one part acid/vinegar to three parts oil. Cling film and set aside till later.

Step 3 - Grilled Chicken Fillets

Season your chicken breasts fillets with salt only. Heat a large grill pan over high heat, once your pan is hot and smoking, grill your chicken breasts for 2-3 minutes on each side until well charred and cooked through. Season with pepper once done.

To Serve

Dress your Caprese salad with your balsamic dressing and divide your salad amongst your servings. Serve with your cheesy garlic rolls and grilled chicken.
