Balsamic Pomodoro Nutty Rata Farfalle

Just because we all loved our DailyDish Balsamic Pomodoro sauce so much we had to feature it again in all it's Italianish splendour this time with pasta bowties, roast rata vegetables and a taste unifier nutty sunflower seed and lemon butter.




Ingredients to serve 2

  • 200g x Diced Bacon
  • 1 clove x Garlic - chopped
  • 5g x Thyme - leaves pulled from stem and chopped
  • 3 tbsps x Sunflower Seeds - chopped
  • 10ml x Lemon Juice
  • 2 x Courgettes - cut into rounds
  • 150g x Broccoli - cut into small florets
  • 150g x Farfalle Pasta
  • 30g x Parmesan - grated
  • 150ml x DD Balsamic Pomodoro
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 400g x Diced Bacon
  • 2 cloves x Garlic - chopped
  • 10g x Thyme - leaves pulled from stem and chopped
  • 6 tbsps x Sunflower Seeds - chopped
  • 20ml x Lemon Juice
  • 4 x Courgettes - cut into rounds
  • 300g x Broccoli - cut into small florets
  • 300g x Farfalle Pasta
  • 60g x Parmesan - grated
  • 300ml x DD Balsamic Pomodoro
  • 60g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Bring a large saucepan of salted water to the boil for use in Step 1 - See Gino's Tip.

Washing Instruction

Wash your hands, courgettes and broccoli well. Rinse your thyme thoroughly and drain on paper towel.

Gino's Tip

Salting your water is the only way to season your pasta, I use just under a tsp per litre of water.

Step 1 - Farfalle Pasta and Seedy Butter

Cook your farfalle pasta in your large saucepan of salted boiling water for 10-12 minutes until your pasta is cooked or "al dente". Heat your butter, chopped sunflower seeds, lemon juice, chopped garlic and thyme in the microwave for 15-second intervals until melted - keep warm until you're ready to serve.

Step 2 - Roasted Greens

Toss your courgette rounds and broccoli florets in a large mixing bowl with a drizzle of olive oil, salt and pepper. Scatter onto an oven tray and roast for 18-25 minutes until your vegetables are lightly browned and tender.

Step 3 - Finishing your Pasta

Once your pasta is cooked, give your large saucepan a quick clean and place on the stove over med-high heat, once your pan is hot add a drizzle of olive oil and fry your diced bacon for 4-5 minutes until crisp. Drain on paper towel. To the same pan add your DailyDish Balsamic Pomodoro and warm it through. Now fold through your cooked farfalle pasta, roasted greens and diced bacon.

To Serve

Divide you balsamic Pomodoro pasta amongst your servings, top with your seedy butter and grated parmesan.
