Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.
Washing Instruction
Wash your hands, courgettes and cherry tomatoes well. Rinse your basil thoroughly and drain on paper towel.
Gino's Tip
If your baby marrows are quite thick then quarter them lengthwise instead, or just the ones that are thick.
Step 1 - Parmesan Courgettes
Toss your halved courgettes in a large mixing bowl with your sambal oelek, a drizzle of olive oil, salt and pepper.
Scatter onto an oven tray and pop in the oven for 12-15 minutes, halfway through scatter over your grated parmesan and cook until your courgettes is lightly browned and tender.
Step 2 - Tomato Salsa
Whisk together your lemon juice and honey and add two times its volume in olive oil then season with salt and pepper.
Now add your quartered cherry tomatoes, sliced red onions and chopped anchovies.
Reserve your tomato salsa for serving, adding your picked basil leaves before doing so.
Step 3 - Grilled Pork
Season your pork sirloin steaks with salt only, then proceed to rub with olive oil.
Heat a large grill pan over med-high heat, once your pan is hot and just about smoking, grill your pork sirloin steaks for 3-4 minutes on each side attaining a good char on each side.
To Serve
Divide your parmesan courgettes amongst your servings, top with your tomato salsa, grilled pork and dollops of DailyDish Garlic Yoghurt.
