Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 180°C.
Washing Instruction
Wash your hands and cherry tomatoes well. Rinse your Italian flat-leaf parsley and fennel thoroughly and drain on paper towel.
Gino's Tip
Dairy cows and beef cows are farmed differently. Usually, beef cows are raised for meat until they're one or two years old. Meanwhile, dairy cows will be farmed for much longer while they continue to produce enough milk. However, once a dairy cow stops producing milk, the meat is rarely eaten but their meat can still be amazingly rich and succulent.
Step 1 - Roast Cherry Tomatoes and Lentil and Herb Salad
Toss your quartered cherry tomatoes in a large mixing bowl with a drizzle of olive oil, salt, and pepper. Place onto an oven tray, skin side down, and roast for 12-16 minutes until your tomatoes are slightly oven-dried. In the meantime, give your large mixing bowl a quick clean and mix in your drained lentils, sliced red onion, and chopped herbs. Season with salt and pepper and crumble over your blue cheese.
Step 2 - Seared Steak and Red Wine Dressing
Rub your sirloin steaks with your coriander, salt, and pepper. Heat a large frying pan over medium-high heat, add a drizzle of olive oil and once your pan is hot, fry your steaks for 2-3 minutes on each side or cook to your desired doneness. Add butter to the pan, allow it to froth before removing your pan from the heat. Lastly, whisk your red wine vinegar along with double the amount of olive oil in a small mixing bowl, taste and season only if need be.
To Serve
Dress your lentil and herb salad with your red wine dressing and divide this amongst your servings, top with your roast cherry tomatoes and your seared steak and butter.
