Cauliflower Mac and Cheese

A velvety crispy bacon and chard moreish cauliflower and cheese bake.

Ingredients to serve 2

  • 150g x Diced Bacon
  • 2 tbsps x Harissa Paste
  • 1 x Cauliflower - cut into florets
  • 100g x Cherry Tomatoes
  • 150g x Swiss Chard - shredded
  • 60g x Cottage cheese
  • 50g x White Cheddar - grated
  • 200ml x DD Cheese Sauce Carb
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 300g x Diced Bacon
  • 4 tbsps x Harissa Paste
  • 2 x Cauliflower - cut into florets
  • 200g x Cherry Tomatoes
  • 300g x Swiss Chard - shredded
  • 120g x Cottage cheese
  • 100g x White Cheddar - grated
  • 400ml x DD Cheese Sauce Carb
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”.Bring a large saucepan of salted water to the boil and preheat your oven to 220°C.

Washing Instruction

Wash your hands, cauliflower and cherry tomatoes well. Rinse your swiss chard thoroughly and drain on paper towel.

Gino's Tip

This recipe works so well with any and all types of cheeses. If you have any bits of cheese in the fridge, chop them up nice and chunky and toss them into your cauliflower and sauce mixture.

Step 1 - Roast Cherry Tomatoes and Cauliflower

Place your cherry tomatoes on an oven tray, drizzle with olive oil and season with salt and pepper. Place into the oven for 6-8 minutes until blistered and soft. Turn your oven over to grill. Cook your cauliflower florets in a large saucepan of salted water for 12-15 minutes until soft. Drain through a colander. Heat your cottage cheese slightly in the microwave and once warm, whisk together with your DailyDish Cheese Sauce and harissa paste in a medium mixing bowl. Proceed to mix in your cooked cauliflower florets and transfer to your medium baking dish. Set aside till later.

Step 2 - Crisp Bacon and Sauté Chard

While your cherry tomatoes are roasting and your cauliflower is cooking, heat a large frying pan over med-high heat. Add a glug of olive oil and fry your diced bacon for 3-4 minutes until slightly crisp. Transfer to a serving dish. In the same pan, cook your swiss chard for 2-3, in batches, until it has wilted. Transfer to the same serving dish as your fried diced bacon. Taste and lightly season with salt and pepper.

Step 3 - Assembling your Mac and Cheese

Top your medium baking dish containing your cauliflower and sauce with your crisp bacon, sautéed Swiss chard, and roasted cherry tomatoes. Sprinkle over your grated white cheddar, pop into the oven on the grill for 6-8 minutes. Keep an eye on your cauliflower and make sure your cheese doesn't singe.

To Serve

Divide your Cauliflower Mac and Cheese amongst your servings.
