Spiced Chicken and Vegetable Rice

A jambalaya that will cook in no time and all at one go with our roasted vegetable and bbq spiced chicken rice.




Ingredients to serve 2

  • 2 x Chicken Breast - cut into cubes
  • 5g x DD Spice Mix - spiced chicken
  • ½ x Red Onion - sliced
  • 1 x Red Pepper - core removed and cut into small chunks
  • 100g x Cauliflower florets - cut into small florets
  • 100g x Basmati Rice
  • 90g x Lemon - zest and halved for juicing
  • ½ x Basil - chopped before serving
  • 2.5g x Chives - chopped before serving
  • 2.5g x Butter (from your pantry)
  • 30g x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breast - cut into cubes
  • 10g x DD Spice Mix - spiced chicken
  • 1 x Red Onion - sliced
  • 2 x Red Pepper - core removed and cut into small chunks
  • 200g x Cauliflower florets - cut into small florets
  • 200g x Basmati Rice
  • 180g x Lemon - zest and halved for juicing
  • 1 x Basil - chopped before serving
  • 5g x Chives - chopped before serving
  • 5g x Butter (from your pantry)
  • 60g x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of water to the boil for use in Step 1.

Washing Instruction

Wash your hands, red peppers and lemon well. Rinse your basil and chives thoroughly and drain on paper towel.

Being healthy also means being mindful while eating. Listen to your hunger and satiety cues and react to them. Don't eat more if you are full and vice versa.

Step 1 - Basmati Rice

Once your medium saucepan of water has come to the boil, add your basmati rice. As soon as the water boils again, give the rice a good stir, reduce the heat to a simmer and cook for 8-10 minutes. Drain through a colander and set aside till later.

Step 2 - Spiced Chicken and Vegetable Rice Base

Season your chicken cubes with salt, pepper and rub with your DailyDish Spice Mix and mix with your sliced red onions. Heat a large casserole pan over med-high heat, add a drizzle of olive oil and once your pan is hot but not smoking fry your chicken and sliced onions until golden brown, about 4-5 minutes. Transfer your chicken and onions to a chopping board once done. To the same pan add your butter, chunked red peppers, small cauliflower florets and peas with a dash of water, cover with a lid and cook until softened, about 3-4 minutes. Once your rice is done, add your chicken back to your pan and mix with your rice, herbs, lemon zest and a squeeze of lemon juice to taste. Taste and season with salt and pepper.

To Serve

Divide your spiced chicken and vegetable rice amongst your servings.
