Sheet Pan Chicken with Roasted Nicoise

A revamp on everything Nicoise with this renovated low carb sheet pan baked chicken with sweet potato, creamy artichoke, salty olives, crunchy greens, and plump tomatoes salad Nicoise, finished in lavish feta sauce fashion.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • 200g x Sweet Potato Chunks
  • 150g x Green Beans - stem ends trimmed
  • 100g x Artichokes
  • 1 x Plum Tomato - diced
  • 80g x Black Pitted Olives
  • 50g x Baby Spinach - long or thick stems removed
  • 20g x Capers
  • 75ml x DD Chilli Feta Sauce
  • 2 x Eggs (from your pantry)
  • Bowl of Water - See Step 2 (from your pantry)
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breast - flattened
  • 400g x Sweet Potato Chunks
  • 300g x Green Beans - stem ends trimmed
  • 200g x Artichokes
  • 2 x Plum Tomato - diced
  • 160g x Black Pitted Olives
  • 100g x Baby Spinach - long or thick stems removed
  • 40g x Capers
  • 150ml x DD Chilli Feta Sauce
  • 4 x Eggs (from your pantry)
  • Bowl of Water - See Step 2 (from your pantry)
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C and bring a medium saucepan of water to the boil for use in step 2.

Washing Instruction

Wash your hands, green beans and plum tomatoes well. Rinse your baby spinach thoroughly and drain on paper towels.

Did you know that vegetables such as tomatoes and baby spinach have a close to negligible calorie content? This makes them a great addition to meals to get in extra goodness without adding endless calories. Further veggies like this include cucumber and celery to name a few.

Step 1 - Roasted Nicoise Salad and Sheet Pan Chicken

Season the flattened chicken breasts with salt and pepper. Place onto a lightly greased oven tray and drizzle over some olive oil, cover with foil and pop into the oven for 10 minutes. After 10 minutes remove the foil and continue roasting for a further 6-8 minutes until completely cooked through and tender. Toss the sweet potato chunks in a large mixing bowl with a drizzle of olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 6 minutes. In the meanwhile in the same mixing bowl toss the green beans, artichokes and black olives with a drizzle of olive oil, salt and pepper. After roasting the sweet potato for 6 minutes, scatter the green beans, artichokes and black olives onto your oven tray alongside the sweet potato and continue roasting for 10-12 minutes until all your vegetables are lightly browned and tender.

Step 2 - Boiled Eggs and Chilli Feta Sauce

Once your medium saucepan of salted water has come to the boil, cook your eggs 6-8 minutes. Cool in your bowl of cold water and peel while submerged - this makes peeling so much easier - cut into halves or quarters once done. While you're waiting, thin the DailyDish Chilli Feta Sauce with a dash of milk in a medium mixing bowl and reserve to serve.

To Serve

Toss the plum tomatoes, baby spinach and capers through your roasted Nicoise salad, divide amongst your servings. Top with boiled eggs, sheet pan chicken and drizzle over the DailyDish Chilli Feta Sauce.
