Chicken Biryani with Coconut Riata

Seared chicken breast with a spiced button mushroom and lentil cheats biryani basmati rice finished with coconut and cucumber raita.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • ½ x Diced Onions
  • 10g x Garlic - crushed
  • 10g x Ginger Paste
  • 150g x Button Mushrooms - quartered
  • ½ tin x Lentils - drained and rinsed
  • 80g x Basmati Rice
  • ½ x Cucumber - grated
  • ½ tin x Coconut Milk
  • 2.5g x Coriander - chopped into your riata - See Step 2
  • 5g x DD Spice Mix - biryani
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast - flattened
  • 1 x Diced Onions
  • 20g x Garlic - crushed
  • 20g x Ginger Paste
  • 300g x Button Mushrooms - quartered
  • 1 tin x Lentils - drained and rinsed
  • 160g x Basmati Rice
  • 1 x Cucumber - grated
  • 1 tin x Coconut Milk
  • 5g x Coriander - chopped into your riata - See Step 2
  • 10g x DD Spice Mix - biryani
  • 60g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands and cucumber well. Brush your mushrooms with a soft basting brush. Rinse your coriander thoroughly and drain on paper towel.

Experimenting with new dishes is a great way to include foods in your diet that you usually don't eat, thereby improving the variety in your diet.

Step 1 - Basmati Rice

Bring a medium saucepan of water to the boil and add your basmati rice. As soon as the water boils again, give the rice a good stir, reduce the heat to a simmer and cook for 8-10 minutes. Drain through a colander and set aside till later.

Step 2 - Cucumber and Coconut Riata

Mix your grated cucumber along with your coconut milk and chopped coriander in a medium mixing bowl. Season with salt and pepper and drizzle with a bit of olive oil.

Step 3 - Cheats Biryani

Heat a large casserole pan over med-high heat, add a glug of olive oil and fry your quartered button mushrooms for 3-4 minutes until well browned and cooked. Transfer to a serving dish once done. In the same pan sweat off your diced onions, crushed garlic and ginger paste until soft and translucent, about 4-5 minutes. Proceed to add your butter, lentils and cook for 1-2 minutes. Return your button mushrooms to the pan and add your DailyDish Spice Mix. Heat through for 1 minute. Season with salt and pepper to taste and remove your pan from the heat until your rice is cooked - with curries you wouldn't generally season with pepper, but as this is a mild Malay savory rice dish you can use pepper to balance your flavors. Once your rice has cooked, return your casserole pan to the heat, mix your rice into your cheat's biryani mixture, taste once more and balance with salt and pepper if need be.

Step 4 - Seared Chicken Breast

Season your chicken breasts with salt and pepper. Heat a large frying pan over med-high heat. Add a glug of olive oil and fry your chicken breasts for 2-3 minutes on each side until completely cooked through.

To Serve

Place your cheats biryani as your base, top with your seared chicken breast (whole or slice) and serve with your cucumber and coconut riata.
