Roast Red Pepper and Pea Couscous

Oven-baked caramelised sweet bell pepper, black olives and courgettes with fluffy, olive oil dressed couscous with plum peas and danish feta and a minted thick Bulgarian yoghurt.




Ingredients to serve 2

  • 150g x Peas
  • 1 x Red Peppers - cores removed and cut into large chunks
  • 3 x Courgettes - cut into rounds
  • 50g x Pitted Black Olives - chopped
  • 150g x Couscous
  • 50g x Feta Cheese - gently crumbled
  • ½ x Cucumber - quartered lengthwise, diced
  • 125ml x Plain Yoghurt
  • 2 tbsps x Mint Sauce
  • 1½ cup x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 300g x Peas
  • 2 x Red Peppers - cores removed and cut into large chunks
  • 6 x Courgettes - cut into rounds
  • 100g x Pitted Black Olives - chopped
  • 300g x Couscous
  • 100g x Feta Cheese - gently crumbled
  • 1 x Cucumber - quartered lengthwise, diced
  • 250ml x Plain Yoghurt
  • 4 tbsps x Mint Sauce
  • 3 cups x Boiling Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, courgettes, cucumber and red peppers well.

Yoghurt is a great alternative to use as part of your salad dressings or to expand a dressing and make the total fat content lower.

Step 1 - Couscous

Place your couscous and boiling water in a medium mixing bowl, cover with cling film and set aside. Your couscous will cook to perfection in about 7-8 minutes. When soft and cooked, fluff and loosen the grains with a fork, add a dash of olive oil and mix in your chopped olives and crumbled feta. Set aside till later.

Step 2 - Roasted Red Peppers

Place your chunked red peppers and courgettes rounds on an oven tray lined with baking sheet/parchment, add a drizzle of olive oil and season well with salt and pepper. Roast for 12-15 minutes. When done, set aside until your ready to serve.

Step 3 - Saute Peas

Heat a large frying pan over high heat, add a drizzle of olive oil and fry your peas, with a dash of water for 2-3 minutes. Remove the pan from the heat and season well with salt and pepper.

Step 4 - Tzatziki

In a medium mixing bowl combine your diced cucumber, plain yoghurt and mint sauce. Season with salt and pepper and reserve to serve.

To Serve

Mix your couscous with your roasted red peppers, courgettes and saute peas filling. Serve with your Tzatziki.
