Blue Cheese and Corn Primavera

A delicate but robust green bean and corn creamy gnocchi primavera with sprinklings of blue cheese and white cheddar finished with the smokiest of chicken.




Ingredients to serve 2

  • 150g x Smoked Chicken - flaked
  • 15g x Crushed Garlic
  • ½ tin x Corn Kernels - drained and rinsed
  • 100g x Pak Choi - See Gino's Tip
  • 100g x Green Beans - stem end trimmed
  • 150g x Gnocchi Pasta Shells
  • 150ml x Cream
  • 40g x White Cheddar - grated
  • 30g x Blue Cheese
  • Bowl of Ice Water (from your pantry) - optional
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 300g x Smoked Chicken - flaked

  • 1 tin x Corn Kernels - drained and rinsed
  • 200g x Pak Choi - See Gino's Tip
  • 200g x Green Beans - stem end trimmed
  • 300g x Gnocchi Pasta Shells
  • 300ml x Cream
  • 80g x White Cheddar - grated
  • 60g x Blue Cheese
  • Bowl of Ice Water (from your pantry) - optional
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands, green beans and pak choi well.

Gino's Tips

Trim the base of each pak choi head, remove each leaf and stalk, then shred each leaf along with its fleshy stalk bit.

Step 1 - Green Beans and Gnocchi Pasta Shells

Once your large saucepan of salted water has come to the boil cook your green beans for 5-6 minutes and remove with a slotted spoon or tongs. Whenever I cook any greens I always keep a bowl of ice water at hand to shock/refresh them. You can choose to chop your beans once cooled or to leave them whole. Using the same pan of boiling water, cook your gnocchi pasta shells for 10-12 minutes until "al dente". When done, drain through a colander and set aside.

Step 2 - Corn and Pak Choi Primavera Filling

Heat a large casserole pan over med-high heat. Add a glug of olive oil and fry your flaked chicken for 3-4 minutes. Now add your chopped garlic and corn kernels. Sweat for 2-3 minutes. Add your shredded pak choi and cook until soft and wilted, about 3-4 minutes. Season well with salt and pepper. Proceed to add your cooked green beans, cream, and white cheddar. Once your cheese is fully melted, mix in the cooked gnocchi pasta shells. If you find your pasta is a bit dry or your sauce is too thick, thin it out with some milk. Remove from the heat.

To Serve

Divide your corn and pak choi primavera amongst your servings and finish by sprinkling blue cheese over it, at your discretion.
