Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220C. Before braaing be sure to have your coals hot and ready. Just before your meats are ready you can warm your garlic loaf in the oven for 8-10 minutes turning them readily. OR You may place them on a cool spot on your coals or grill and tend to them throughout your grilling.

Washing Instruction

Wash your hands, lemon, baby potatoes and spring onion well. Rinse our thyme thoroughly and drain on paper towel.

Gino's Tip

If you have a large grill its best to get all your meats on the grill, remember to disperse your coals evenly so that you don't have any hotspots.

Roasted Butternut Teriyaki and Sesame Potato Salad

Toss your butternut chunks and halved baby potatoes in a large mixing bowl with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray and pop into your the oven to roast for 25-30 minutes until your vegetables are lightly browned and tender. Once done allow to cool slightly then mix through your mayonnaise and sprinkle over your sesame seeds and finely sliced spring onion. Cling film and reserve in the fridge until your ready to serve. Serve by drizzling over your teriyaki and sriracha sauce.

Lamb Loin Chops

Rub your lamb loin chops with olive oil and season with your chicken spice. Place your lamb loin chops on your coals and grill for 4 minutes on each side until well charred and just about cooked through. You want your lamb to gain color so that any fats crisp and your meat stays juicy and tender. If you find your meat flaming or singeing lift or elevate the grill a bit more or flip your meat more readily.

Marinated Chicken Skewers

Use your kebab sticks and cubed chicken to make 4 chicken kebabs with 3 cubes on each. Season you kebabs with salt and pepper, rub with your lemon zest and pulled thyme. Place on your grill and cook for 2 minutes on each side. Your aiming to char each surface of the kebab so you may have to turn you skewers two or more times depending on how they lay when cooking. Just before they are done, squeeze over your lemon juice.

Pop your boerewors onto the coals, but be sure to keep it nicely rolled up so flipping becomes easier. Grill for 3-4 minutes on each side. It's so much easier using a large braai lifter or egg lifter to flip your boerewors.
