Seared Pork with Caper Verde Potatoes

There is no lockdown on flavor in our test kitchen with this seared pork neck with horseradish and herby new potato salad with pak choi and greens.




Ingredients to serve 2

  • 2 x Pork Neck Steaks
  • 300g x Baby Potatoes - halved
  • 30g x Capers - chopped
  • 15g x Garlic - crushed
  • 10g x Italian Flat Leaf Parsley - chopped
  • 10g x Fennel - chopped
  • 30ml x Horseradish Cream
  • 10g x Parmesan - grated
  • ½ x Lemon - zested then halved for juicing
  • 150g x Green Beans
  • 100g x Pak Choi
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Pork Neck Steaks
  • 600g x Baby Potatoes - halved
  • 60g x Capers - chopped
  • 30g x Garlic - crushed
  • 20g x Italian Flat Leaf Parsley - chopped
  • 20g x Fennel - chopped
  • 60ml x Horseradish Cream
  • 20g x Parmesan - grated
  • 1 x Lemon - zested then halved for juicing
  • 300g x Green Beans
  • 200g x Pak Choi
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Bring a large saucepan of salted water to the boil for use in Step 3.

Washing Instruction

Wash your hands, baby potatoes, lemon and green beans well. Rinse your italian flat leaf parsley, fennel and pak choi well.

Gino's Tip

Pork neck is an amazing cut, be sure to get your pan hot before adding your steaks so you render your fat. Any excess fat in the pan can be spooned out while your cooking.

Step 1 - Verde New Potatoes

Cook your halved baby potatoes in a large saucepan of water for 10-12 minutes until soft. Once done drain through a colander and toss in a large mixing bowl with your chopped capers, crushed garlic, parsley, and fennel. Then mix through your: horseradish cream, parmesan, lemon zest, and lemon juice, and drizzle over some olive oil. Season with salt and pepper. Reserve to serve.

Step 2 - Seared Pork - See Gino's Tip

Season your pork neck steaks with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking, fry your steaks for 2 minutes on each side for a total of 8 minutes and cooked all the way through.

Step 3 - Blanched Greens

Once the water in your large saucepan has come to the boil and your seared pork is done, cook your green beans for 5-6 minutes. Remove your green beans with tongs or slotted spoon and transfer to a boil. Then cook your pak choi in your boiling water, drain through a colander and toss along with your green beans, olive oil, and salt and pepper.

To Serve

Divide your verde new potatoes amongst your servings, top with your blanched greens and seared pork.
