Crispy Bacon and Greens Panzerotti Florentine

Winters coming.......no need to worry we gotcha with this creamy ala vodka spinach panzerotti with roasted green bean, feta, and bacon salad.




Ingredients to serve 2

  • 150g x Diced Bacon
  • 400g x Spinach Panzerotti
  • 100ml x Aurora Sauce
  • 75g x Grated Mozzarella
  • 200g x Green Beans - stem end trimmed
  • ½ x Feta - gently crumbled
  • 10g x Rocket - long or thick stems removed
  • Bowl of Ice Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 800g x Spinach Panzerotti
  • 200ml x Aurora Sauce
  • 150g x Grated Mozzarella
  • 400g x Green Beans - stem end trimmed
  • 1 x Feta - gently crumbled
  • 20g x Rocket - long or thick stems removed
  • Bowl of Ice Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1. Bring a medium saucepan of salted water to the boil for use in Step 2. Preheat your oven to grill.

Washing Instruction

Wash your hands and green beans well. Rinse your rocket thoroughly and drian on paper towel.

Our aurora sauce is a lovely fusion of Napoletana sauce and bechamel which can be used in any pasta or even on its own in any meat or veg-based recipe

Step 1 - Spinach Panzerotti Florentine

Once your large saucepan of water has come to the boil cook your panzerotti for 2-3 minutes until they float to the surface. Drain through a colander and season lightly with salt and pepper. Now add your panzerotti to an oven tray and top with your aurora sauce in an even layer. Sprinkle over the grated mozzarella and pop into the oven on for 3-4 minutes until heated through and gratinated. Keep a watchful your panzerotti as the cheese can singe quite easily with the oven on grill.

Step 2 - Green Bean, Crispy Bacon and Feta Salad

Cook your green beans in your medium saucepan of salted water for 5-6 minutes until just about tender, drain with a slotted spoon into a bowl of ice water. While your green beans are cooking heat a large frying pan over med-high heat and fry your diced bacon for 3-4 minutes or until crisp - drain on paper towel. Add your green beans to a large mixing bowl along with your rocket, crispy bacon and crumbled feta, season to taste with salt and pepper, then drizzle with some olive oil.

To Serve

Divide your spinach florentine amongst your servings and top with your green bean, crispy bacon and feta salad.
