Crispy Beef, Lemon and Avocado Spaghetti

Salsa style crispy beef and lemon spaghetti with fresh tomatoes and avocado.




Ingredients to serve 2

  • 200g x Beef Mince
  • 1 x Avocado - halved, pip removed, peeled and diced
  • ½ x Red Onion - diced
  • 2 x Tomatoes - diced
  • 150g x Spaghetti
  • 20g x Rocket - long or thick stems picked
  • 30g x Parmesan - grated
  • ½ x Lemon - zested and juiced
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 400g x Beef Mince
  • 2 x Avocado - halved, pip removed, peeled and diced
  • 1 x Red Onion - diced
  • 4 x Tomatoes - diced
  • 300g x Spaghetti
  • 40g x Rocket - long or thick stems picked
  • 60g x Parmesan - grated
  • 1 x Lemon - zested and juiced
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands, tomatoes and lemon well. Rinse your rocket thoroughly and drain on paper towel.

When eating pasta dishes, make sure to add plenty of veg to increase the fibre and nutrient content of your meal.

Step 1 - Spaghetti

Cook your spaghetti in a large saucepan of salted boiling water for 10-12 minutes until “al dente”. Drain through a colander once done and set aside until later.

Step 2 - Salsa Fills

Place your lemon zest and juice in a large mixing bowl and add a few dashes of olive oil. Add your diced avocado, red onions, plum tomatoes and mix gently. Season with salt and pepper to taste.

Step 3 - Crispy Mince

Heat a large casserole pan over medium-high heat. Once your pan is hot, add your beef mince and let it brown for 6-8 minutes until crisp. Transfer to a serving dish.

To Serve

Mix your pasta into your salsa fills and toss with your rocket. Divide your pasta amongst your servings and top with your crispy mince and grated parmesan.
