Gino's Tip

Flavoured butter's are what dreams are made of and quite a handy trick up the sleeve you can use this recipe as a base and substitute almost anything in place of sriracha to make a flavoured butter of note for any occasion perfect for meats, bread's, vegetables, rice, pasta you name it.

Step 1 - Roasted Sweet Potato and Greens

Toss your sweet potato chunks in a large mixing bowl with a drizzling of olive oil, salt and pepper. Scatter onto an oven tray (reserve our mixing bowl for your veggies) and pop into the oven for 10 minutes. Meanwhile toss your trimmed green beans and florets of broccoli in your large mixing bowl drizzling with olive oil, salt and pepper. After your sweet potatoes have roasted for 10 minutes, scatter over your green beans and broccoli and continue roasting for 10-12 minutes until your sweet potato is lightly browned and your veggies are tender.

Step 2 - Sriracha Butter Sirloin Steak

Season your sirloin steak with salt and pepper. Heat large frying pan over med-high heat, add a drizzling of olive oil and once your pan is hot, fry your steaks for 3-4 minutes on each side or cooked to your desired doneness whether that be more or less time on each side - transfer to your chopping board. Now add your butter, crushed garlic, capers and soy paste to the pan and once your butter starts frothing remove your pan from the heat, add your steaks back to the pan and baste with your sriracha butter. Please note sriracha is spicy so please use it at your discretion.

To Serve

Divide your roasted sweet potato and greens amongst your servings and top with your srirach butter sirloin steak and butter pan sauce.
