Sriracha Butter Steak with Caper Potatoes

Steak dinners should be simple, easy, and familiar......well we got simple, easy and the familiar with a bit of flair try this caper greens with roast potatoes and sriracha butter steak.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 1 tbsp x Sriracha - spicy, use at your discretion
  • 20g x Capers - chopped
  • 15g x Garlic - crushed
  • 10ml x Soy Paste
  • 100g x Green Beans - stem end trimmed
  • 100g x Broccoli - cut into florets
  • 300g x Sweet Potato Chunks
  • 40g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Sirloin Steaks
  • 2 tbsp x Sriracha - spicy, use at your discretion
  • 40g x Capers - chopped
  • 30g x Garlic - crushed
  • 20ml x Soy Paste
  • 200g x Green Beans - stem end trimmed
  • 200g x Broccoli - cut into florets
  • 600g x Sweet Potato Chunks
  • 80g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.

Washing Instruction

Wash your hands, green beans, and broccoli well.

Flavoured butters are what dreams are made of and quite a handy trick to have up your sleeve to use in this recipe. It can be used as a base and substitute for sriracha in almost anything to make a flavoured butter of note for any occasion and perfect for meats, bread, vegetables, rice, pasta, you name it.

Step 1 - Roasted Sweet Potato and Greens

Toss your sweet potato chunks in a large mixing bowl with a drizzling of olive oil, salt, and pepper. Scatter onto an oven tray (reserve your mixing bowl for your veggies) and pop into the oven for 10 minutes. Meanwhile, toss your trimmed green beans and florets of broccoli in your large mixing bowl drizzling with olive oil, salt, and pepper. After your sweet potatoes have roasted for 10 minutes, scatter over your green beans and broccoli and continue roasting for 10-12 minutes until your sweet potato is lightly browned and your veggies are tender.

Step 2 - Sriracha Butter Sirloin Steak

Season your sirloin steaks with salt and pepper. Heat large frying pan over medium-high heat, add a drizzling of olive oil and once your pan is hot, fry your steaks for 3-4 minutes on each side or cook to your desired doneness then transfer to your chopping board. Now add your butter, crushed garlic, capers, soy paste, and sriracha (at your discretion) to the pan and once your butter starts frothing remove your pan from the heat, add your steaks back to the pan and baste with your sriracha butter.

To Serve

Divide your roasted sweet potato and greens amongst your servings and top with your sriracha butter sirloin steak and butter pan sauce.
