Malay Fajita Bowl and Tangy Cream

If only you could be in two places at once well now you can with this Malay fajita bowl a curried chicken breast Mexican grilled capsicum and spring onion with brown rice and a surprising creamy ranch sour cream.




Ingredients to serve 2

  • 2 x Chicken Breasts
  • 5g x DD Spice Mix - indian chicken
  • 100g x Brown Rice
  • 1 x Green Pepper - cores removed and chunked
  • 2 x Courgette - chunked
  • 2 stalks x Spring Onion - sliced thinly
  • 20g x Blue Cheese - gently crumbled
  • 80ml x Sour Cream
  • 5g x Coriander - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

  • 4 x Chicken Breasts
  • 10g x DD Spice Mix - indian chicken
  • 200g x Brown Rice
  • 2 x Green Pepper - cores removed and chunked
  • 4 x Courgette - chunked
  • 4 stalks x Spring Onion - sliced thinly
  • 40g x Blue Cheese - gently crumbled
  • 160ml x Sour Cream
  • 10g x Coriander - leaves pulled from stem
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Mix your sour cream and blue cheese crumbs in a small mixing bowl and reserve to serve.

Wash your hands, green peppers and courgettes well.

A fajita in Tex-Mex and Mexican cuisine is any grilled meat that is usually served as a taco on a flour or corn tortilla. The term originally referred to skirt steak, the cut of beef first used in the dish.

Step 1 - Brown Rice

Cook your brown rice in a large saucepan of water for 25-30 minutes untily our rice is tender with a slight bite - al dente. Drain through a colander once done and season with salt and pepper.

Step 2 - Oven Roasted Vegetables

Toss your chunked green peppers and courgettes in a large mixing bowl, drizzle over some olive oil, salt and pepper and then scatter onto an oven tray. Pop into the oven for 12-15 minutes until your vegetables are tender then mix through your sliced spring onion.

Step 3 - Malay Fajita Chicken

Season your chicken breast with salt, pepper and rub with your DailyDish Spice Mix. Heat a large frying pan over med heat and add a glug of olive oil. Once the oil is hot, fry the breasts for 2 minutes on each side until they've had 6-8 minutes cooking time in total. You want to flip your chicken a bit more often so that your spices don't singe.

To Serve

Divide your rice amongst your servings top with your malay fajita chicken, roast vegetables, blue cheese sour cream and picked coriander.
