Solo: Ginger Chicken with Sweet Spicy Cucumber

Just because its cooler weather doesn't mean your tastebuds should hibernate try our peanut grilled chicken with broccoli rice and tamarind dressed cucumber and grape tomatoes, all the flavor eating and heating you'll need.

Ingredients to serve 1

  • 1 x Chicken Breast - butterflied - See Gino's Tip
  • ½ tsp x Cumin Seeds
  • 52.5ml x DD Peanut and Ginger Sauce
  • ½ head x Broccoli - chopped/grated
  • ¼ x Cucumber - sliced
  • 75g x Cherry Tomatoes - halved
  • 25ml x DD Tamarind Dressing
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)


Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Whisk your DailyDish Peanut and Ginger Sauce along with about 80-100ml warm water, salt and pepper, thinning with more if need be - it should be a drizzle-able consistency once done.

Washing Instruction

Wash your hands, cucumber and cherry tomatoes well.

Gino's Tip

To butterfly a chicken breast, first, start with a sharp knife. Then place your hand on top of the boneless, skinless chicken breast, slice horizontally into the chicken, dividing it half. Stop about a half-inch from the opposite side. When done, you should be able to open up the chicken like a book so it lies flat

Step 1 - Tamarind Cucumber

Whisk your DailyDish Tamarind Dressing along with a few glugs of olive oil in a medium mixing bowl and a light seasoning of salt and pepper. Toss your sliced cucumber and halved cherry tomatoes in your bowl with your dressing then clingfilm until your ready to serve.

Step 2 - Broccoli Rice

Heat a large casserole pan over med-high heat, add a drizzling of olive oil and once your pan is warm cook your chopped/grated broccoli for 5-6 minutes along with a dash of water until tender. Taste, once done and season with salt and pepper if necessary

Step 3 - Cumin Butterflied Grill Chicken

Season your chicken breast with salt and pepper, then rub with olive oil. Heat a large grill pan over med-high heat, once your pan is hot and smoky, grill your chicken breast for 2-3 minutes on each side until well charred and completely cooked through.

To Serve

Divide your broccoli rice amongst your servings top with your cumin butterflied grill chicken and your tamarind cucumber.
