Tteokbokki Creamy Cauliflower Bake

A traditional Korean mouth-watering winner reworked in our Carb Conscious way with roasted cauliflower, mustardy choi, salty bacon, and an indulgent gochujang tomato-based sauce.




Ingredients to serve 2

  • 100g x Diced Bacon
  • 1 head x Cauliflower - cut into florets
  • 150g x Pak Choi
  • 1 x Onion - sliced
  • 100ml x DD Low Carb Cheese Sauce
  • 75g x Grated Mozzarella
  • 20g x Grated Parmesan
  • 200ml x DD Tteokokki Sauce
  • 2 x Eggs (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 200g x Diced Bacon
  • 2 heads x Cauliflower - cut into florets
  • 300g x Pak Choi
  • 2 x Onion - sliced
  • 200ml x DD Low Carb Cheese Sauce
  • 150g x Grated Mozzarella
  • 40g x Grated Parmesan
  • 400ml x DD Tteokokki Sauce
  • 4 x Eggs (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Bring a medium saucepan of water to the boil for use in Step 2. Take your eggs out of the fridge so they can come to room temperature.

Washing Instruction

Wash your hands and cauliflower well. Rinse your pak choi thoroughly and drain on paper towel.

Gino's Tip

Tteok-bokki or stir-fried rice cakes is a popular Korean food made from small-sized garae-tteok called tteokmyeon or commonly tteok-bokki-tteok. Eomuk, boiled eggs, and scallions are some of the most commonly added ingredients.

Step 1 - Roasted Cauliflower and Bacon Tteokbokki Base

Toss your cauliflower florets in a large mixing bowl along with olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 12-15 minutes until lightly browned and tender. Meanwhile heat a large casserole pan over med-high heat, add a drizzling of olive oil and once the pan is warm crisp your bacon for 2-3 minutes before adding your sliced onions. Cook for 8-10 minutes until your onions are soft and translucent and slightly caramelised before adding your pak choi and removing your pan from the heat.

Step 2 - Boiled Eggs

Once your water in your medium saucepan has come to the boil, add your eggs and boil for 7 minutes. Remove with a slotted spoon and cool under running cold tap water, allow the water to run into a bowl. Once done peel your eggs into your bowl of water - you will find by peeling your eggs in water it makes it way easier to remove the shell.

Step 3 - Assembling your Tteokbokki

Heat your DailyDish Tteokbokki Sauce in the microwave and once your cauliflower has roasted mix your sauce and cauliflower in a large mixing bowl (folding carefully as not to mush cauliflower) Transfer to a baking dish, top with your bacon tteokbokki base, drizzle over your DailyDish Low Carb Cheese Sauce and your grated mozzarella and parmesan. Pop into the oven for 6-8 minute until your sauce is hot and bubbly and your cheese is gooey and gratinated.

To Serve

Divide your tteokbokki creamy cauliflower bake amongst your servings along with your boiled eggs.
