Lentil Con Carne and Crumbled Cheese

If there was ever a con carne to be dreamt about this would be it with sublime scrumptiousness created by paprika, cumin, and red lentils with sweet red bell pepper, black beans and corn kernels served with fluffy rice and crumbed feta cheese.




Ingredients to serve 2

  • 100g x Feta - diced - See Gino's Tip
  • 120g x DD Onion Crumbing
  • 100g x Basmati Rice
  • 5g x Coriander - leaves pulled from stem
  • ½ x Onion - diced
  • 15g x Garlic - crushed
  • ½ sachet x Tomato Paste
  • 1 x Tomatoes - diced
  • ½ x Red Pepper - diced
  • 50g x Red Lentils
  • ½ tin x Black Beans - drained and rinsed
  • ½ tin x Red Kidney Beans - drained and rinsed
  • ½ tin x Corn Kernels - drained and rinsed
  • 7.5g x DD Spice Mix - con carne
  • ½ x Eggs - whisked (from your pantry)
  • 1 cup x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 200g x Feta - diced - See Gino's Tip
  • 240g x DD Onion Crumbing
  • 200g x Basmati Rice
  • 10g x Coriander - leaves pulled from stem
  • 1 x Onion - diced
  • 30g x Garlic - crushed
  • 1 sachet x Tomato Paste
  • 2 x Tomatoes - diced
  • 1 x Red Pepper - diced
  • 100g x Red Lentils
  • 1 tin x Black Beans - drained and rinsed
  • 1 tin x Red Kidney Beans - drained and rinsed
  • 1 tin x Corn Kernels - drained and rinsed
  • 15g x DD Spice Mix - con carne
  • 1 x Eggs - whisked (from your pantry)
  • 2 cups x Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Prepare a bowl with your all-purpose flour, a bowl with your whisked egg and a bowl with your DailyDish Onion Crumbing. Bring a large saucepan of water to the boil for use in Step 1.

Washing Instruction

Wash your hands, red pepper and tomatoes well. Rinse your coriander thoroughly and drain on paper towel.

Gino's Tip

Once your feta has been diced place it in the freezer to keep as cold as possible before frying it.

Step 1 - Basmati Rice

Once your water in your large saucepan has come to the boil add your basmati rice, once your water comes back to the boil give your rice a good stir, reduce your heat to a simmer and cook for 8-10 minutes until tender. Drain through a colander once done and reserve to serve.

Step 2 - Con Carne

Heat a large casserole pan over med-high heat, add a drizzling of olive oil and once your pan is hot fry your diced onion, chopped garlic and diced red pepper for 4-5 minutes. Proceed to add your DailyDish Spice Mix and cook while stirring for 1-2 minutes. Now add your tomato paste, diced tomatoes and red lentils along with your water and cook for 15-20 minutes until your lentils are cooked - add more water if need be. (you will know when your lentils are cooked as they break up easily and are quite soft) Lastly mix through your black beans, red kidney beans and corn and allow to heat through. Taste and season with salt and pepper.

Step 3 - Crumbed Feta

Proceed to dust in your diced feta in all-purpose flour, then your whisked egg and finally in your DailyDish Onion Crumbing. Heat a large frying pan over med-high heat and add a shallow layer of sunflower oil. Once your oil is hot, fry your crumbled feta for 1-2 minutes on each side until golden and crisp. If your oil isn't hot enough your crumbled feta will stick to the base of the pan, so be sure that your oil is hot, especially between each batch of frying. Once done drain on a paper towel and reserve to serve.

To Serve

Divide your rice amongst your servings, top with your con carne, crumbed feta and picked coriander. Enjoy!
