Solo: Steak with Lemon, Chilli Parm Cauliflower

Deliciously roasted lemon and chili caper cauliflower with a pan-seared steak finished with grated parmesan.




Ingredients to serve 1

  • 1 x Sirloin Steak
  • ¼ head x Cauliflower - stem removed & head sliced
  • ¼ tsp x Coriander Seeds
  • 125g x Green Beans - stem ends trimmed
  • 10g x Parmesan - grated
  • 10ml x Lemon Juice
  • 22.5ml x DD Spiced Caper Butter Base
  • 15g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C and bring a medium saucepan of salted water to the boil for use in Step 2.

Washing Instruction

Wash your hands and cauliflower and green beans well.

Capers are the unripened flower buds of Capparis spinosa; they add tanginess and a salty flavour to recipes, as well as an interesting texture.

Step 1 - Caper Butter Cauliflower

Scatter your sliced cauliflower onto an oven tray, drizzle with olive oil, scatter over your coriander seeds and season with salt and pepper. Pop into the oven to roast for 18-25 minutes until well roasted and well browned. While your cauliflower is roasting, melt your butter in the microwave for 10-second increments then mix in your DailyDish Spiced Caper Butter Base. Season lightly with salt and pepper.

Step 2 - Seared Sirloin Steak

Season your steaks with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a glug of olive oil and fry your steaks for 3-4 minutes on each side or until cooked to desired doneness.

Step 3 - Blanched Green Beans

Once your water in your medium saucepan has come to the boil, cook your green beans (in batches) for 6-8 minutes until tender with a slight bite. Remove with a slotted spoon into a large mixing bowl and toss with a bit of olive oil and season with salt and pepper.

To Serve

Toss your roasted cauliflower with your spiced caper butter, add your lemon juice while you're doing this and divide amongst your servings, top with your green beans and seared sirloin steak and grated parmesan.
