Solo: Scallion Salsa Pork with Steamed Baby Cabbag

Warm salsa is our thing right now, it's a great way to add extra comfort and create full-flavored meals without too much sauciness, paired with a juicy pork steak, steamed sweet baby cabbage, and mustard and cress warm salad.




Ingredients to serve 1

  • 1 x Pork Sirloin Steak
  • 1 x Baby Cabbage - halved, core cut out - See Gino's Tip
  • 150g x Sweet Potato Chunks
  • 1 stalk x Spring Onion - finely sliced
  • 15ml x Wholegrain Mustard
  • 10ml x Honey
  • 10g x Watercress - long or thick stems removed
  • 25g x DD Scallion Salsa Base
  • 10g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of water to the boil for use in Step 3.

Washing Instruction

Wash your hands baby cabbage and spring onion well. Rinse your watercress thoroughly and drain on paper towel.

Gino's Tip

To remove the triangular core of your cabbage, once halved, cut into the core at an angle where the stem meets the leaves of the cabbage, and remove it from each half.

Step 1 - Cress and Sweet Pot Salad

Whisk wholegrain mustard and honey together and set aside. Cook sweet potato chunks in a medium saucepan of water for 10-12 minutes until just about tender. Once done allow sweet potato chunks to cool slightly - placing them in the freezer for a few minutes on a flat tray helps speed things up. Then proceed to mix your cooled sweet potato chunks, wholegrain mustard, and honey, tasting and seasoning with salt and pepper. Just before serving mix through your picked watercress.

Step 2 - Scallion Butter Pork

Season your pork sirloin steak with salt and pepper. Heat a large frying pan over med-high, fry your pork for 3-4 minutes on each side until completely cooked through. Transfer to a serving dish. To the same pan add your butter a good drizzling of olive oil and once your butter froths add your DailyDish Scallion Salsa Base along with your sliced spring onion (scallion). Cook for 1-2 minutes then pour your warm salsa over your pork sirloin steaks.

Step 3 - Steamed Baby Cabbage

Once your water in your large saucepan has come to the boil cook your halved baby cabbage for 4-5 minutes until your leaves are soft. Drain through a colander and toss lightly with olive oil, salt and pepper.

To Serve

Divide your cress and sweet potato salad amongst your servings, top with your steamed baby cabbage and scallion butter pork.
