Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”
Washing Instruction
Wash your hands, tomatoes and chives well.
Mariella's Tip
When cooking millet use twice the amount of water to millet eg. 1 cup millet to 2 cups water.
Step 1 - Herbed Millet and Marinated Tomato Salad
Cook millet in a medium saucepan of salted water for 12-15 minutes until just about tender - should have a couscous like mouth-feel.
Once done drain through a colander if need be and mix along with your chopped chives, salt, and pepper.
Meanwhile toss your quartered cherry tomatoes and diced plum tomatoes along with our DailyDish Turmeric Dressing, salt, and pepper.
Sprinkle over your crumbled ricotta and clingfilm until your ready to serve.
Step 2 - Grilled Prawns
Season your prawns with your chicken spice, salt, and pepper then drizzle with olive oil.
Heat a large grill pan over high heat until just about smoking, proceed to grill your prawns along with your chopped garlic, in batches, for 2-3 minutes on each side.
It's important that you don't overcrowd your pan otherwise your prawns will braise instead of the grill and caramelize.
To Serve
Divide your herbed millet amongst your servings top with your marinated tomato salad and grilled prawns.
