Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.
Washing Instruction
Wash your hands and tenderstem broccoli well.
Mariella's Tip
Rule of thumb for cooking proteins - muscles that work more readily need longer more, less hot and moist cooking times, while muscles that don't work as much need shorter cooking times and higher heat.
Step 1 - Roasted Broccoli
Toss the tenderstem broccoli in a large mixing bowl along with some olive oil, salt and pepper.
Scatter onto an oven tray (give your large mixing bowl a quick clean) and pop into the oven for 6-8 minutes until just about tender and lightly browned.
Meanwhile mix your drained lentils, chopped peppadews, and avocado in a large mixing bowl and season well with salt and pepper adding a drizzling of olive oil.
Be gentle when mixing your lentils and diced avocado.
Once your tenderstem broccoli is done mix it with your lentil salad.
Step 2 - Masala Steak
Season your steaks with salt and pepper.
Heat a large frying pan over med-high heat, add a drizzle of olive oil, and once your pan is hot but not smoking, sear your sirloin steaks for 2-3 minutes on each side or until cooked to desired doneness.
Transfer your steaks to a chopping board, add your butter to the pan along with your garam masala and cumin seeds, and allow your butter to froth while stirring your spices in.
Remove your pan from the heat and place your steaks back into your masala butter.
To Serve
Smear your hummus on your serving plates, top with your roasted broccoli and lentil salad and serve with your masala steak
