Grilled Chicken and French Onion Ramen

Ingredients to serve 2

  • 2 x Chicken Breasts
  • 1 x Onions - sliced
  • ½ tin x Lentils - drained and rinsed
  • 125g x Button Mushrooms - sliced
  • 2 nests x Egg Noodles
  • 1 tsp x Chicken Stock
  • 80g x Grated Mozzarella
  • 60ml x Soy Paste
  • 500ml x Water (from your pantry)
  • 20g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breasts
  • 2 x Onions - sliced
  • 1 tin x Lentils - drained and rinsed
  • 250g x Button Mushrooms - sliced
  • 4 nests x Egg Noodles
  • 2 tsps x Chicken Stock
  • 160g x Grated Mozzarella
  • 120ml x Soy Paste
  • 1000ml x Water (from your pantry)
  • 40g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”

Ramen is a Japanese noodle soup. It consists of Chinese wheat noodles served in a meat or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork, nori, menma, and scallions

Step 1 - Caramelised Onions, Mushrooms and Lentil Broth

Heat a large casserole pan or stewing pot over med-high heat, add a drizzling of olive oil and your butter and add your sliced mushrooms and onions and caramelized them for 15-20 minutes. Be sure to stir them readily so they don't catch on the base of the pan - use a few dashes of water if it does catch and remember when it does catch the dark spots act as a fond and add flavor to your ramen. Once done add your chicken stock, soy paste, drained lentils, and your water and bring your sauce to heat. Proceed to add your ramen noodles to your liquid and cook until tender, about 3-4 minutes, this is the perfect time to check for seasoning and balance with salt and pepper if need be. Transfer your ramen to a medium baking dish top with your grated mozzarella and pop into the oven on grill for 3-4 minutes until your cheese is gooey and slightly gratinated - please keep an eye out for any singeing.

Step 2 - Seared Chicken

While your onions are caramelizing, season your chicken breast with salt and pepper., heat a large frying pan over med-high heat, add drizzling of olive oil and fry the chicken breast for 3-4 minutes until completely cooked through. Once done transfer to a serving dish and slice once cool enough to do so.

To Serve

Divide your grilled chicken and french onion ramen amongst your servings and top with your sliced chicken breast.
