Sirloin Steak Kombersies and Mash

We can't go a day without steak and mash....okay maybe that an overstatement....but there's just so many flavors bouncing around our heads that we just couldn't resist this Ouma's rendition with our steak and tomato baby cabbage with cream cheese mash.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 5g x Meat Spice
  • 2.5g x Sage - chopped
  • 20g x Pumpkin Seeds
  • 3 x Baby Cabbage - halved - See Gino's Tip
  • 300g x Potatoes - peeled and quartered
  • 60ml x Cream Cheese
  • 100ml x Chunky Tomato Sauce
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 10g x Meat Spice
  • 5g x Sage - chopped
  • 40g x Pumpkin Seeds
  • 6 x Baby Cabbage - halved - See Gino's Tip
  • 600g x Potatoes - peeled and quartered
  • 120ml x Cream Cheese
  • 200ml x Chunky Tomato Sauce
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 2. Heat your chunky tomato sauce in the microwave until warm and reserve for Step 3.

Washing Instruction

Wash your hands, baby cabbage and potatoes well.

Gino's Tip

To remove the triangular core of your cabbage, once halved, cut into the core at an angle where the stem meets the leaves of the cabbage, and remove it from each half.

Step 1 - Cream Cheese Mash

Cook your quartered potatoes in a large saucepan of salted water for 10-12 minutes until soft. Drain through a colander and mash with a potato masher until smooth. Now fold in your cream cheese and a little milk to thin the mash out. Taste and season with salt and pepper to your liking.

Step 2 - Steamed Cabbage

Once your water in your large saucepan comes to the boil cook your halved cabbage for 4-5 minutes, drain through a colander, drizzle with olive oil, salt and pepper and reserve for later

Step 3 - Seared Steak Kombersies

Season your steaks with meat spice and pepper. Heat a large frying pan over med-high heat, add a drizzle of olive oil, and once your pan is hot but not smoking, sear your sirloin steaks for 2-3 minutes on each side or until cooked to desired doneness - its best to cook your steaks slightly under for the next process. Transfer your steaks to a shallow baking dish, top with your steamed cabbage, then your chunky tomato sauce, pumpkin seeds, and chopped sage. Pop into the oven for 3-4 minutes until your sauce has heated through.

To Serve

Divide your cream cheese mash amongst your servings, top with your seared steak kombersies.
