Feta Sweet Potato Jackets

Baked sweet potatoes served with crumbled feta, red onion, chilli, yoghurt and lime juice. Garnished with fresh coriander.




Ingredients to serve 2

  • 2 x sweet potatoes, washed
  • 100g x feta cheese – crumble
  • 1 tin x red onion, finely sliced
  • ½ x fresh chilli, deseeded, finely chopped
  • ½ x lime, halved, juiced
  • ½ x plain yoghurt
  • 60ml x fresh coriander, roughly chopped
  • 5g x olive oil (from your pantry)
  • 1 tbsp x salt & pepper (from your pantry)

  • 4 x sweet potatoes, washed
  • 200g x feta cheese – crumble
  • 2 tins x red onion, finely sliced
  • 1 x fresh chilli, deseeded, finely chopped
  • 1 x lime, halved, juiced
  • 1 x plain yoghurt
  • 120ml x fresh coriander, roughly chopped
  • 10g x olive oil (from your pantry)
  • 2 tbsp x salt & pepper (from your pantry)

Method

Step 1

Pre-heat oven to 200°C.

Step 2

Cut the sweet potatoes in half lengthways. Place on a baking tray, splash with olive oil and season with coarsely ground salt. Bake in the oven until tender - about 15 to 20 minutes.

Step 3

Divide the sweet potato between the serving plates. Now add red onion, chilli, a little lime juice, a dollop of yoghurt and chopped coriander. Lastly crumble the feta on top and add a few twists of coarsely ground black pepper.
