Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”. Preheat your oven to 200°C.
Washing Instruction
Wash your hands, corn on the cob, green beans and courgettes well. Rinse your swiss chard thoroughly and drain on paper towel.
Mariella's Tip
Place a small bowl upside-down inside a large bowl. Then stand the corn — root side down — on top of the smaller bowl, and use a sharp knife to slice down along the cob. Instead of flying every which way, the kernels will collect in the bottom of the bowl.
Step 1 - Roasted Gnocchi
Toss your gnocchi in a large mixing bowl with olive oil, salt and pepper.
Scatter onto an oven tray and pop into the oven for 8-10 minutes.
Step 2 - Corn and Greens Primavera
Heat a large casserole pan over med-high heat, add a drizzling of olive oil and fry your diced bacon for 5-6 minutes until crisp and cooked through.
Now add your diced onions, chopped garlic, corn kernels, halved green beans, shredded swiss chard and half-moon courgettes and continue cooking until your greens are tender.
Lastly, add your cream and cook for 1-2 minutes until heated through.
Finish by mixing through your roasted gnocchi.
To Serve
Divide your creamy corn and spinach gnocchi amongst your servings, sprinkling over your crumbled blue cheese.
