Creamy Chive Chicken and Pumpkin Crush

Into a warming wonderland of familiar flavors done in the DailyDish way. A soothingly lightly smothered pan-seared chive cream chicken breast with pumpkin and new potato crush and all them brussel and pea greens.




Ingredients to serve 2

  • 2 x Chicken Breast - flattened
  • 100ml x Sour Cream
  • ½ tsp x Chicken Stock
  • 5g x Chives - chopped
  • 200g x Pumpkin Chunks
  • 300g x Baby Potatoes - halved
  • 100g x Peas
  • 100g x Brussels Sprouts - halved
  • 1 clove x Garlic - chopped
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breast - flattened
  • 200ml x Sour Cream
  • 1 tsp x Chicken Stock
  • 10g x Chives - chopped
  • 400g x Pumpkin Chunks
  • 600g x Baby Potatoes - halved
  • 200g x Peas
  • 200g x Brussels Sprouts - halved
  • 2 cloves x Garlic - chopped
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220C.

Greens are particularly important for kids. Calcium is central to developing healthy and strong bones and teeth. Greens also boost the immune system, which can keep your little ones from getting sick. And we all know how much they need this boost when they are trading germs at school or on the playground!

Step 1 - Pumpkin and Potato Crush

Toss your halved baby potatoes and pumpkin chunks in a large mixing bowl with olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 25-30 minutes until lightly browned and tender. Once done crush your potatoes and pumpkin lightly together.

Step 2 - Chive Cream Chicken

Season your chicken breast with salt and pepper and rub with some olive oil. Heat a large frying pan over med-high heat, once your pan is hot but not smoking fry your chicken breast for 2-3 minutes on each side or until completely cooked through. If your chicken has been uniformly flattened it should take 3 minutes on each side but you can extend the time to suit the thickness or thinness of your chicken breasts. Once done transfer your chicken to your chopping board and add your sour cream, a dash of milk, chopped chives and chicken stock to the pan and bring your sauce to heat while whisking.

Step 3 - Garlic Greens

Heat a large casserole pan over med-high heat, add a drizzle of olive oil then add your brussels sprouts, cook for 4-5 minutes until lightly browned then add your chopped garlic and peas with a few dashes of water and cook until your vegetables are tender (about 2-3 minutes). Once done taste and then season with salt and pepper.

To Serve

Divide your pumpkin and potato crush amongst your servings, top with your garlic and parm greens and chive cream chicken.
