Steak with Cottage Cheese Bravas

Spanish comfort food at its peak a rendition of patatas bravas with crispy sweet potato, red pesto sauce, juicy prime sirloin steak and dollops of chunky textured cottage cheese.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • 100ml x Chunky Tomato Sauce
  • 2 tbsps x Red Pepper Pesto
  • 300g x Sweet Potato Chunks
  • ½ tbsp x Chicken Spice
  • 150g x Cherry Tomatoes - quartered
  • 100ml x Cottage Cheese
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 200ml x Chunky Tomato Sauce
  • 4 tbps x Red Pepper Pesto
  • 600g x Sweet Potato Chunks
  • 1 tbsp x Chicken Spice
  • 300g x Cherry Tomatoes - quartered
  • 200ml x Cottage Cheese
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”. Preheat your oven to 220°C.

Wash your hands and cherry tomatoes well.

Patatas bravas, also called patatas a la brava or papas bravas, is a dish native to Spain, often served as a tapa in bars. It typically consists of white potatoes that have been cut into irregular cubes of about two centimetres, then fried in oil and served warm with a spicy sauce.

Step 1 - Roasted Sweet Potato Bravas

Toss your sweet potato chunks in a large mixing bowl along with olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 15-18 minutes until lightly browned and tender, then sprinkle over your chicken spice. Meanwhile, heat your chunky tomato sauce through in a small saucepan, then add your red pepper pesto, taste and season with salt and pepper - thin with water if too thick.

Step 2 - Tomato Salad

Toss your quartered cherry tomatoes in a small mixing bowl along with some olive oil, salt and pepper. Reserve to serve.

Step 3 - Seared Steak

Season your steaks with salt and pepper. Heat a large frying pan over med-high heat, once your pan is hot but not smoking, add a drizzle of olive oil and fry your steaks for 2-3 minutes on each side or until cooked to desired doneness. This could be a shorter cooking time or a longer cooking time - remember longer cooking times on a quick cut of meat will render a tougher end result. Remove your pan from the heat, once done.

To Serve

Divide your roasted sweet potatoes amongst your servings, top with your red pesto sauce, cottage cheese, tomato salad and seared steak.
