Method
Before You Begin
Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C.
Washing Instruction
Wash your hands red cabbage, cherry tomatoes and baby potatoes well. Rinse your coriander thoroughly and drain on paper towel.
Gino's Tip
Sour cream or soured cream is a dairy product obtained by fermenting regular cream with certain kinds of lactic acid bacteria. The bacterial culture, which is introduced either deliberately or naturally, sours and thickens the cream which is great for your gut health.
Step 1 - Spiced Herbed Potatoes
Toss your halved baby potatoes in a large mixing bowl along with olive oil, salt and pepper.
Scatter onto an oven tray (reserve your large mixing bowl for the next step) and pop into the oven for 18-25 minutes until lightly browned and tender.
Season with your vegetable spice and sprinkle and toss with your curry powder.
Step 2 - Charred Cabbage and Lentils
Toss your cabbage chunks in your large mixing bowl with olive oil, salt and pepper.
Scatter onto an oven tray and pop into the oven for 6-8 minutes until charred.
Heat a large frying pan, add some olive oil and butter and once your butter begins to froth add your charred cabbage and drained lentils.
Mix together and heat through, tasting and seasoning with salt and pepper.
Step 3 - Seared Chicken
Season your chicken breast with salt and pepper.
Heat a large frying pan over med-high heat, once your pan is hot but not smoking fry your chicken breast for 3-4 minutes on each side until completely cooked through.
Once done toss in a bowl with your chopped coriander.
To Serve
Divide your spiced herbed potatoes amongst your servings, top with your charred cabbage and lentils, cherry tomatoes and seared chicken and dollops of sour cream.
