Truffle Steak for 4

There's really no need to go out for a great, juicy saucy night out when you can do the same and even better at home. Four prime sirloin steaks served with blushing blistered tomatoes, crispy soft Frites, and extra decadence with our seared exotic mushroom cream sauce.




Ingredients to serve 2

  • Sirloin Steaks
  • Heirloom Tomatoes
  • Potatoes - cut into matchstick fries
  • Truffle Oil
  • Exotic Mushrooms
  • DD Mushroom Sauce
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 200g x Heirloom Tomatoes
  • 600g x Potatoes - cut into matchstick fries
  • 20ml x Truffle Oil
  • 200g x Exotic Mushrooms
  • 200ml x DD Mushroom Sauce
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out.Take out any “Pantry Items”.

Washing Instruction

Wash your hands, tomatoes and potatoes well.

Gino's Tip

Getting that perfect sear and caramelization is about a really hot pan, be sure to get your pan smoking hot and then add your oil and seasoned steaks. Allow your steak to sear/caramelize on one side then flip over to the other side for the same effect.

Step 1 - Pomme Frites

Toss your matchstick fries in a large mixing bowl with a drizzling of olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 30-35 minutes. Keep an eye on your fries and halfway through check on caramelization or browning and test whether they are done or not. Remember convection ovens cook faster than radiation ovens. Or Cook your matchstick potatoes in a saucepan submerged in oil with a seasoning of salt for 4-5 minutes. You want to bring the potatoes up to heat along with the oil. Then drain through a colander being careful not to break the matchstick fries, place in the freezer to cool down totally. Once your potatoes are cold and using the same oil but bring the oil to heat (about 180C) fry your matchstick potatoes until golden brown and crisp. Taste and then season if need be with salt and pepper.

Step 2 - Blistered Tomatoes

Blister your cherry tomatoes in a hot pan with a few dashes of olive oil for 3-4 minutes until browned and slightly tender. Season with salt and pepper.

Step 3 - Steak and Truffled Mushroom Sauce

Season your steaks with salt and pepper and rub with olive oil. Heat a large frying pan over med-high heat, once your pan is hot and smoky fry your sirloin steaks for 2-3 minutes on each side or cooked to your desired doneness - whether that be longer or shorter times. Transfer your steaks to your chopping board, now fry your exotic mushroom with a drizzling of olive oil in the same pan for 2-3 minutes until its begun to brown nicely before adding a dash of milk to your pan along with your mushroom sauce. Heat your sauce through and mix through your truffle oil to finish. Taste and then season if need be with salt and pepper.

To Serve

Divide your pomme frites amongst your servings along with your blistered tomatoes, steak and truffled mushroom sauce.
