Aged Beef with Spicy Sweet Potato Hash

We know one thing that will warm everyone up during this season and that a Cape Malay hash sweet potatoes with tenderstem greens and a beautiful 21 day aged sirloin steak.




Ingredients to serve 2

  • 2 x Sirloin Steaks
  • ½ x Red Onion - finely sliced
  • 20g x Crushed Garlic
  • 20g x Ginger Paste
  • 2 x Lime Leaves
  • 100g x Tenderstem Broccoli - each stem halved
  • 2 x Carrots - chunked
  • 300g x Sweet Potato Chunks
  • 60ml x Sour Cream
  • 1 tsp x Curry Powder
  • 15g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Sirloin Steaks
  • 1 x Red Onion - finely sliced
  • 40g x Crushed Garlic
  • 40g x Ginger Paste
  • 4 x Lime Leaves
  • 200g x Tenderstem Broccoli - each stem halved
  • 4 x Carrots - chunked
  • 600g x Sweet Potato Chunks
  • 120ml x Sour Cream
  • 2 tsps x Curry Powder
  • 30g x Butter (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”.Preheat your oven to 220°C.

Washing Instruction

Wash your hand, tenderstem broccoli and carrots well.

Cutting your vegetables the same size ensures that it roasts and cooks evenly.

Step 1 - Spiced Sweet Potato Hash

Toss your sweet potato chunks and carrot chunks in a large mixing bowl along with some olive oil, salt, and pepper. Scatter onto an oven tray (reserve your large mixing bowl) and pop into the oven for 15 minutes. Meanwhile toss your tenderstem broccoli in your large mixing bowl with olive oil, salt, and pepper. After your initial 15 minutes add your tenderstem broccoli and continue roasting for 8-10 minutes. Heat a large casserole pan over med-high heat, add a drizzling of olive oil and your butter, and once it froths add your sliced red onion, garlic, ginger, and lime leaves. Saute for 4-5 minutes before mixing through your curry powder, remove your pan from the heat until your vegetables have roasted, and once done mix your vegetables through your curry mix. Taste once more and season if need be with salt and pepper.

Step 2 - Seared Sirloin Steak

Season your sirloin steaks with salt and pepper. Heat a large frying pan over med-high heat, add a drizzling of olive oil and once your pan is hot but not smoking fry your steaks for 2-3 minutes on each side or until cooked to your desired doneness, whether this be more or less than the prescribed time.

To Serve

Divide your spiced sweet potato hash amongst your servings, add dollops of your sour cream and serve with your seared sirloin steak (whole or sliced).
