Crispy Chicken, Root Mash and Cheese Sauce

Cornflake crispy crumbed chicken breast with butternut and sweet potato mash and creamy plump peas.




Ingredients to serve 2

  • 2 x Chicken Breasts
  • 40g x Cornflakes - crushed finely
  • 135ml x DD Buttermilk Marinade
  • 200g x Sweet Potato Chunks
  • 200g x Butternut Chunks
  • 150g x Peas
  • 150ml x DD Cheese Sauce
  • 5g x Basil
  • 40g x Panko Breadcrumbs
  • 20g x Butter (from your pantry)
  • Milk (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 4 x Chicken Breasts
  • 80g x Cornflakes - crushed finely
  • 270ml x DD Buttermilk Marinade
  • 400g x Sweet Potato Chunks
  • 400g x Butternut Chunks
  • 300g x Peas
  • 300ml x DD Cheese Sauce
  • 10g x Basil
  • 80g x Panko Breadcrumbs
  • 40g x Butter (from your pantry)
  • Milk (from your pantry)
  • Water (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Mix your sliced chicken breast along with your DailyDish Buttermilk Marinade and prepare a bowl with your crushed cornflakes and panko breadcrumbs. Preheat your oven to 220°C.

Washing Instruction

Wash your hands well. Rinse your basil thoroughly and drain on paper towel.

Gino's Tip

Because buttermilk is only slightly acidic, it is capable of tenderizing chicken without toughening up the meat like stronger marinating acids do (lemon and vinegar, among others).

Step 1 - Sweet Potato and Butternut Mash

Toss your sweet potato and butternut chunks in a large mixing bowl, drizzle with olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 18-25 minutes until soft and lightly browned. Now rustically mash with a potato masher, season with salt and pepper to taste and when ready to serve, slice your basil and mix it through.

Step 2 - Crispy Cornflake Chicken

Heat a large frying pan with a shallow layer of sunflower oil be sure that the oil is about 2 fingers thickness in the pan. Coat your marinated sliced chicken breast in your crushed cornflakes and panko breadcrumbs and pack separately onto a plate or chopping board. Once your oil is ready - it will shimmer slightly - fry your cornflake chicken for 4-6 minute until well browned and cooked through.

Step 3 - Butter Peas and Cheese Sauce

Heat a small saucepan over med-high heat, add a drizzling of olive oil and your butter. Once your butter has melted add your peas with a dash of water and cook for 2-3 minutes before adding your DailyDish Cheese Sauce and a dash of milk. Taste and season with salt and pepper.

To Serve

Divide your basil mash amongst your servings, top with your crispy chicken, butter peas and cheese sauce.
