Smoky Bacon and Corn Spaghetti

Pasta you say, yes a waist hugging marinated feta dressed spaghetti with crispy bacon, corn on the cob, cherry tomatoes, and scallion wonderment.




Ingredients to serve 2

  • 150g x Diced Bacon
  • 1 stalk x Spring Onion - finely chopped
  • 1 clove x Garlic - chopped
  • 100g x Cherry Tomatoes - halved
  • 2 x Corn on the Cob - kernels cut from the cob
  • 20g x Wild Rocket - long or thick stems removed
  • 100g x Feta - gently crumbled
  • 40g x Peppadews - chopped
  • 20ml x Dijon Mustard
  • 5g x Origanum - chopped
  • 10ml x Honey
  • 150g x Spaghetti
  • 5ml x Lemon Juice
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Ingredients to serve 4

  • 300g x Diced Bacon
  • 2 stalks x Spring Onion - finely chopped
  • 2 cloves x Garlic - chopped
  • 200g x Cherry Tomatoes - halved
  • 4 x Corn on the Cob - kernels cut from the cob
  • 40g x Wild Rocket - long or thick stems removed
  • 200g x Feta - gently crumbled
  • 80g x Peppadews - chopped
  • 40ml x Dijon Mustard
  • 10g x Origanum - chopped
  • 20ml x Honey
  • 300g x Spaghetti
  • 10ml x Lemon Juice
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a large saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands, spring onion, cherry tomatoes and corn on the cob well. Rinse your origanum and wild rocket thoroughly and drain on paper towel.

Mariella's Tip

Place the small bowl upside-down inside a large bowl. Then stand the corn on top of the smaller bowl, and use a sharp knife to slice down along the cob. Instead of flying every which way, the kernels will collect in the bottom of the bowl.

Step 1 - Spaghetti

Cook your spaghetti for 10-12 minutes once your large saucepan of water has come to the boil. Drain through a colander and reserve until later.

Step 2 - Crispy Bacon, Corn and Spring Onion Fills

Heat a large frying pan over med-high heat, add your bacon with a splash of water and cook for 6-8 minutes until your water has evaporated and the bacon fat begins to crisp your meat. Now add your garlic, corn and spring onion and cook for a further 2-3 minutes. Once done mix through your halved cherry tomatoes

Step 3 - Marinated Feta Dressing

Whisk toghether your dijon mustard, chopped peppadews, origanum, lemon juice and honey with a few glugs of olive oil and a few dashes of water. Taste and season with salt and pepper then gently mix through your crumbled feta.

Step 3 - Finishing your Pasta

Once all your components are ready mix them through gently along with your wild rocket, taste and season if need be with salt and pepper.

To Serve

Divide your smoky bacon and corn spaghetti amongst your servings.
