Solo: Grilled Puttanesca Chicken with Sour Creme M

A spiced tomato-based grilled chicken breast with lemony sour cream sweet potato mash and plump peas and green beans as a simple vibrant side.




Ingredients to serve 1

  • 1 x Chicken Breasts - flattened
  • 15ml x Garlic Sauce
  • 35ml x DD Puttanescas Base
  • 100g x Green Beans - stem end trimmed
  • 50g x Peas
  • 2.5g x Mint - leaves pulled from stem
  • 150g x Sweet Potato Chunks
  • ¼ x Lemon - zested and halved for juicing
  • 25ml x Sour Cream
  • 10g x Butter (from your pantry)
  • Milk (from your pantry)
  • Salt and Pepper (from your pantry)
  • Olive Oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Preheat your oven to 220°C. Marinade your chicken breasts with your garlic sauce and season with salt for use later.

Washing Instruction

Wash your hands, green beans well. Rinse your mint thoroughly and drain on paper towel.

Gino's Tip

Grilling your chicken breast is a simple way to add a great smoky flavour, get your pan smoking hot and remember don't oil your pan oil your breast and season with salt and only until your breasts are cooked through. If you're unsure if your chicken is done, you can always finish it off in the oven but flattening your chicken helps to cook them in time and uniformly.

Step 1 - Lemon Creme Mash

Toss your sweet potato chunks in a large mixing bowl along with some olive oil, salt and pepper. Scatter onto an oven tray and pop into the oven for 15-18 minutes until lightly browned and tender. Once your potatoes are done roasting, rustically mash with a potato masher and fold through some lemon zest, a squeeze of lemon juice and all your sour cream. Taste and season with salt and pepper, if need be.

Step 2 - Minted Greens

Heat a large casserole pan over med-high heat, once your pan is hot add a drizzling of olive oil and proceed to char your green beans for 3-4 minutes, now add your peas and a few dashes of water and cook until your water is heated through. Proceed to add your butter and allow your water and butter to reduce to a light sauce, about 2-3 minutes. Mix through your mint just before your ready to serve.

Step 3 - Grilled Putta Chicken

Remove any excess garlic sauce, reserving your sauce, from your chicken breast. Heat a grill pan over high heat, once your pan is hot and smoking, grill your chicken breasts for 3-4 minutes on each side until completely cooked through. Allow your chicken breast to char on one side before flipping them over. Once done transfer to a chopping board, add your garlic sauce and DailyDish Puttanesca Base to your grill pan and heat your sauce through.

To Serve

Divide your lemon creme mash amongst your servings, top with your minted greens, grilled putta chicken and sauce.
